I tried out a Rauchbier. I modified a Graham cracker ale to add a little smoke. I did wimp out in the smoke though so it is closer to a standard dark lager.

RECIPE:
23L Batch

Original Gravity: 1.051

Final Gravity: 1.009
ABV: 5.5%

IBU (Tinseth): 27

Grain

3.5 kg (72.9%) — Maris Otter

1 kg (20.8%) — Honey Malt

200 g (4.2%) — Smoked Malt

100 g (2.1%) — Chocolate Malt   

Hops

13 g (19 IBU) — Magnum 12% — Boil — 60 min

7 g (4 IBU) — Fuggle 4.5% — Boil — 60 min

10 g (2 IBU) — Saaz 3.75% — Boil — 15 min

18 g (2 IBU) — Saaz 3.75% — Boil — 5 min

6 g (1 IBU) — Fuggle 4.5% — Boil — 5 min

This is a nice light beer. Light body with a crisp finish. Aroma has a light maltness, bready with a Carmel undertone that cares into the flavour with neither dominating. I was surprised to see no Carmel in the recipe lol. The combo of honey malt and smoke must have created the light Carmel flavour. Either way, great beer 🍺

why wimp out on the smoke?! ...coming from the newbie brewer who pushes flavors mauybe a bit too far, mwah-hahhh! I caught the caramel'ness as well, and hop profile, despite a low hop addition. Hop profile coming through due to a lack of adjuncts and super-clean brew? Also, taking notes, what is "Honey Malt"? thank you for sharing!

Gonna be honest here, I hate smoked malt in beer. For this reason, I offered it to my neighbor. I talked to him today and he send his thank you along. He gave it a good hime and enjoyed every last drop. Thanks for the share.

This is very nice. Only a hint of smoke, which is plenty for me. Love how clean and smooth this turned out.

Beautiful looking beer. Very well-balanced with a nice level of sweetness. Lovely head. Smokiness was pretty minimal, but I enjoyed searching for it, and i enjoyed what I found.Image
