2020 Advent Calendar - Dec 27 - Wild Hop Juice
Hi everyone, figured I'd stop procrastinating and post the details of my submission.- First some context: A few years ago I found hops growing wild at my parent's. They're very likely a common strain that made it's way there, but who knows - I've been experimenting with them every fall around harvest time. These hops have a very fragrant pineapple scent. What I did here is a simple, wet-hopped beer where I tried to extract as much late addition hop flavour as possible. I am notorious for not noting down my steps and measurements so here are what (little) details I have.
Boil time: 60 minutes
Fermentables:
Marris Otter: 5.25kg
Hops:
20 minutes: ~200g (wet) Mystery hops I done found in my parent's backyard
5 minutes: ~300g (wet) Mystery hops I done found in my parent's backyard
0 minutes: Literally as much hops as I could fit in my mesh bag ~600-700g (wet) Mystery hops
Yeast: US-05
Carbonation: Bottle conditioned in (mostly) 500mL bottles
Notes:
Using large quantities of wet hops will sop up wort like a dang sponge. Lost probably 1-2 L more than expected during the boil.

I was looking forward to this mystery hop
beer and I’m not disappointed. It’s definitely a hop showcase with little malt or yeast character. It’s right hazy, but with the amount of hops used that’s to be expected. I’m not sure what kind of hop it might be, but I’m getting a perfumy floral thing going on with some mandarin orange underneath. The only suggestion I’d have for next time if it was me brewing it is I’d add a bit more gypsum to let the bitterness linger some, but that’s a personal preference.

This is an odd beer. There's no body, virtually no aroma, and just the very slightest hint of grainy malt flavour. There's no hop presence whatsoever. I wouldn't even say there's any bitterness at all. It's very dry. Something must've gone wrong with this bottle.

Mine wasn’t oxidized but I didn’t get any hop flavour or aroma. Kind of like drinking alcoholic water. Odd one for sure here.

I really enjoyed the one I had. Unique hop flavour that was equal parts citrus and floral.

I agree with the other folks, mine had a light body and low carbonation. I'm digging the hop flavour and aroma. Thanks!

There is enough carb in mine, and no glaring production flaws. I think this may be an ornamental hop or possibly it just wasn't a great growing season for these lil'buds. This beer drinks like a NE blonde ale (if that is a thing) to me. low bitterness, some low level pleasant hop aromatics, crushable. I think a touch more bitterness and malt character would be nice to round this beer out. All in all this is a neat little experiment beer. Thanks.

This was carbed fine for me, and I definitely got some nice hop character to it (was looking for pineapple and think of found some in the aroma, but not so much in the taste).
Body was a little thin, but aside from that it tasted quite nice and refreshing. I didn't make and fresh hop beer this year, so I think this might be the only one I drank in 2020! Thanks for the beer.

All I could really taste in this one was the hop character; some background malt presence would have been nice to provide some palate context. There were definitely some citrus and floral elements to the hops, but there wasn’t the kind of depth of flavor I’d have expected from that much hop usage. Definitely an interesting experiment, though, thanks for sharing it.
