That's MY Jam! (Fruited Sour)

This beer is a fruited kettle sour that comes with some homemade strawberry jam syrup. Personally I really like it with the jam syrup if it's the first or second beer of the night but I prefer it straight up if I've already had a couple sweeter drinks in the evening. Feel free to try it at a few sweetness levels and let me know what you think!

This beer was inspired by other "jam" style beers such as Breton Brewing's Let's Jam, or Two Crow's Jamboree.

Malt:
3.64kg 2-row
2.43kg Wheat

Hops:
60g Citra (flameout)
60g Heull Melon (flameout)

Yeast/Bacteria:
US-05
Lactobacillus Plantarum

Water:
Halifax North End water, no adjustment

Steps followed:
1. Mash(67c)/Sparge/Brought to a boil (briefly, no hops)/cooled
2. Inoculated with Lacto. Plantarum
3. Let sour for 2 days
4. Did the normal 60 min boil (and hop additions)
5. Cooled / Added US-05 / fermented for 10 days
6. Boiled 2kg frozen strawberries / cooled / added to fermenter
7. Let beer sit on strawberries for 2 days
8. Kegged

Jam Syrup:
* 1kg frozen strawberries
* 2 cups white sugar
* 1.75L water

OG: 1.056
FG: 1.010 (after sitting on strawberries)

Notes:
* I don't think the hops are integral to reproducing this recipe, if you want to make it use any hops you like or use no hops, the lacto and strawberries are very flavourful and I don't think the hops will be able to make a huge difference in flavour.
* 100% Lactobacillus Plantarum culture was cultivated from a box of probiotic pills, Jamieson "Digestive Care 10 Billion" is what it's currently called, look at the label and ensure it's 100% lactobacillus plantarum if that's what you're going for. I used 3 pills for this recipe. Jamiesons Digestive Care 10 Billion

I foolishly dumped the container of jam into my glass and then poured the beer on top. Way too sweet for me. I enjoyed the level of acidity and fruit flavours present. Should have tried it without the jam, I think I would have enjoyed it quite well.

Enjoyed it, went without the Jam as I didn't want it too sweet and it was perfect for me. Nice job and thanks for the beer!

This was fun. It initially presented as flavored with unripe strawberries and then as I added the jam it started tasting riper and riper. Nifty. Also a really well executed small sour. Thanks!

I think this is a nice, dry, and spritzy kettle sour with pleasant amount of strawberries. We forewent the jam syrup, because we tend to not enjoy overly sweet sours.

One thing I do note is a slight medical/band-aid aroma, which does slightly detract from the experience. Have you ever had that with other brews? I wouldn’t think you’d have an issue with chlorine in north end Halifax, so who knows.

Thought this was fantastic. When I saw jamboree mentioned as a similar style I was excited for this one. The syrup was a fun little addition. Ended up using just under half, but tried it at each sweetness level only adding a small amount at a time.

This was very tasty... great level of sourness, and a pretty-looking beer.

I did not use any syrup, and found it to be very nice... though I did have a slight medicinal/soapy aftertaste (that I was able to look past). Thanks for the beer!Image
