Decembeer 2019 Beer Exchange - Dec 17th. Tonka Bean Stout

Post by wader98 » Mon Dec 16, 2019 10:57 am

Oatmeal Stout

Batch Volume: 4.5 G
OG: 1.054
FG: 1.022
ABV: 5.0%

Grain
Maris Otter 5.85 lb (62%)
Flaked Oats - 0.85 lb (9%)
Victory Malt - 0.65 lb (7%)
Pale Chocolate Malt - 0.55 lb (6%)
Flaked Barley - 0.45 lb (5%)
Black Barley - 0.45 lb (5%)
Caramel/Crystal 80 - US 0.45 lb (5%)
Chocolate Malt 0.15 lb (2%)

Mash @ 156F
Boil 60 mins

Hops
Willamette (IBU: 30.0) 1.65 oz Pellet - Boil 60 min

Yeast
Wyeast 1450, Denny’s Favorite 50

Ferment at 64F - 21 days

Other
20 tonka beans crushed, made into tincture with whisley and added during kegging.

I went a little overboard on the flavoring with the beans. I added a tincture of 10, tasted and added another 10..not realizing it would take a little while for the flavor to take effect.

Lots of flavour from the beans in this one. Reminded me of cardamom. Thanks!

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

This was interesting. Well made beer, no real flaws. Not sure I am a fan of Tonka Beans or not. They are odd. Thanks for the beer!

I think this is only the second time I’ve had tonka beans in a beer and I quite enjoyed the aroma and flavor they brought. The base beer is what I like in a stout as well. I feel like there was a fair amount of diacetyl going on, which got to be a little distracting as it warmed, but not enough to keep my from finishing it.

First time trying/hearing about tonka beans in any form. Interesting aroma... kinda reminded me a little of gingerbread somehow? Agree with cardamom comment as well.

Nice balance with the grain and hops - some umami taste to the beer - a taste I couldnt quite put my finger one, but not in an unpleasant way. It was a little low in carb for me with a slightly thin mouthfeel. Thanks for the share!

Ha, I never would have thought of doing this. For starters, I’ve never heard of tonka beans. I liked it, this was a good idea. I agree that it tastes a little thin for a beer finishing at 22, but that’s my only complaint.

Agree with the other comments - it was a bit on the thin side - but otherwise a nicely made beer and the tonka beans really brought something interesting to it. I got a bit of a snicker-doodle vibe. Tasty brew, thanks for sharing :)

Not saying I like seeing beer dropped but I’m hoping this wasn’t a bottle bomb or anything on my part.

No, it was a me trying to hold too many things at once. I took a tiny sip from a glass-free puddle, and it seemed to be quite tasty, thought it had a nice gingerbread taste to it, but that could have been whatever was on the floor haha.

Quite enjoyed this one on Christmas day after the cyclone of activity was over with the kids. Was getting some sort of spice with it, was thinking cinnamon. First that i have also heard of tonka beans. Thanks!

I tried to get through this, but the tonka beans did not agree with me at all. No fault of the beer :)
