DIPA brewed with LiverDance, a riff off his Comfortably Numb IPA

OG: 1.080
SRM: 7
ABV: 8.5%

Grain Bill:
2 Row - 95%
C20 - 3%
Melanoiden - 2%

Hops:
30g - Horizon @ 60min
25g - Centennial @ 45min
25g - Centennial @ 30min
90g - Cashmere @ 15min
100g - Mosaic (Whirlpool for 20min at 190F)
150g - Mosaic/Cashmere (Dry Hop 5 days)

Yeast:
US-05

Mash @ 152F
Boil 90mins
On tap: APA, Dubbel, Dark Mild
Fermenting: Brett Saison 2022, Schwarzbier, APA, Sour Brown,
Coming up: American Wheat (Fruited), Vienna Lager, Dortmunder
Bottled: Brett Saison 2020, Brett Saison 2021, Baltic Porter

Nice balance of bitterness to malt. Great carbonation and the alcohol is not apparent in aroma or flavour, well-brewed guys. Thanks for sharing. :cheers:

The wife and I drank this quickly. Really nice, we both enjoyed it. It was my first cashmere hop experience. I like the sweet tropical nose it gives. Nice looking beer too and well carbed. The alcohol was very well hidden. Not sure if that's good or not! Thanks.

Had this with supper last night. Really great beer and super easy drinking for 8.5 percent. I couldn't find anything wrong with it. Thanks for the beer.

Just got back from my youngest son's Christmas concert (he plays trombone), and this is helping me unwind.

Deceptively smooth for that ABV. Smells great, taste is on point. Perfect level of bitterness and maltiness. I'll have to try experimenting with a bit of that melanoidin. Gotta get my hand on some mosaic too... such a lovely hop. Thanks for the share!Image

Thanks guys! This is a delight. I love a nice malt character with a big ipa. Perfect touch of crystal and melanoidin. Delicious hop candy flavor. The cashmere has an interesting flavor that with mosaic gives a cotton candy like sweetness without actually being sweet. Bravo!

Beautiful white head that sticks around. Good carbonation, dark amber in colour. Hops present but you can still taste the rich malt character. Getting a sweet raisin note to it which could be related to alcohol sweetness or some of those hops. Well balanced. If I was nitpicking I would say the bitterness could be upped a tiny bit. Very nice beer thanks!
