2019 Advent Calendar - Dec 11 - Dark Saison (+ Multigrain Saison)
This post will consist of two recipes
December 11: Dark Saison
Grain Bill:
8.5lbs - Viking Pale Ale Malt
2lbs - Viking Rye Malt
8oz - Carafa III
1oz - Midnight Wheat
Hops:
1oz - Mt Rainier @60min
Yeast:
WLP565
Mash @ 149F
Boil for 60
Additions:
3.75lbs - Whole Cranberries - Primary for 14 days
1oz - Clementine zest - Primary 5 days
December 11B: Multigrain Saison
Grain Bill:
5.5lbs - Viking Pale Ale Malt
2lbs - Viking Wheat Malt
1lb - Viking Rye Malt
1lb - Flaked Oats
8oz - Spelt Malt
4oz - Flaked Rice
3oz - Flaked Corn
Hops:
0.65oz - Magnum @30min
1oz - Mt Rainier @10min
Yeast:
WLP565
Mash @ 148F
Boil for 30
Additions:
8oz - Table sugar @30min boil
December 11: Dark Saison

Had a nice aroma and could pick up on the fruit! Didn't have the saison punch I was expecting but I liked it. I think more carbonation would have stepped it up! Thanks

Drank this while putting the lights on the tree. I'm not familiar with that yeast, but it didn't taste like the typical saison yeast that I am used to - no really overt/outfront spicy/peppery/estery notes. I liked the base of the malt/hops tho.

Thanks for the feedback guys, I totally agree the yeast presence was lacking and carbonation was low...I attribute the low carb to a brutal filling experience with the beer gun.
I’ve used this yeast a lot and even repitched the slurry in another saison and it has way more character, perhaps a generational thing!

Started this one without looking up what it was. Awfully glad to see cranberries in there.
Definitely a little lower carbed than I’d like and certainly doesn’t have the yeast character I’d expect from a saison. I still enjoyed it enough to to finish it though.

Had 11B on Friday night, which I believe was the Multigrain Saison. A solid beer - nice yeast and malt character. Easy drinking. Well done

Drinking this one today while cooking supper. It's really interesting. Before looking at the recipe I was wondering what that fruity character was. I guessed some kind of dark stone fruit, but couldn't quite figure it out. I found it also had a biscuity nutty character in the aftertaste. I did get some of those typical saison spicy notes. They were more subtle which I prefer. Bone dry with a light body. I must have got lucky because this bottle was very well carbed to saison standards. Just how I like my saisons. Thanks, it was delicious.

Not what I was expecting when I saw saison. Just a hint of spice, a bit low carbed. I was pleasantly surprised as its not a style that I go out of my way for. However quite enjoyed this. Thanks!

I had the dark saison - after opening and taking a sip, I almost mistook it for a stout, the roasty flavour really shines through.
I second the others about the usual saison-y-ness not being present. Not a good or bad thing though, I think if would have worked either way.
