2017 Advent Beer Day 3 (Dec 3rd) Split Personality

Split Personality
Farmhouse Saison
40L batch/120 min boil
Water Treatment (if any): Calcium Chloride (14g), Calcium Sulfite (18g) & Lactic Acid (5ml).
Ca+2 (121 mg/l), SO4-2 (152mg/l) = SO42-/Cl- ratio: 1.5
Mash pH 5.26
Grain:
22lb pilsen malt
2lbs Flaked Barley
mash @ 152f for 90min
mash out at 168f (while recirculating)
Hops:
1oz EKG (6.1% aa) @ 40min
2oz EKG (6.1% aa) @ 20min
2oz EKG (6.1% aa) @ 10min
2 whirlfloc tabs @ 10min
2oz Citra (13.7% aa) @ Flame-out (I waited until the wort cooled to 200f before adding)
Yeast:
Big Spruce Pin Cherry & TYB Amalgamation.
3L (1.040og) starter, blended both cultures in the same starter.
Allowed the starter to ferment for 48 hours before pitching into beer.
Primary: 29 days @ 21C
2oz Cherrywood chips added (each carboy) on day 7 of fermentation. I sanitized the wood chips in a 250f oven for 60min
Keg conditioned with 5oz of corn sugar for 21 Days @ 21C
OG 1.059 FG 1.005

Forgot...i added 15 ml of lactic acid in the fermenter before yeast...wanted the pre ferm ph to be just below 4.5

Really nice beer! Right down my alley. Love the farmhouse character and how smooth it is for 7%. I would be really proud if I brewed this. Great job!

Great beer. Aroma: Tart, slightly fruity (like red berries). Flavour: some grainy malt pils behind the tartness, which is quite pleasant and not sharp. Not much palate funk from the brett yeast, so it's more of a session / gateway sour beer that's very approachable. Finishes clean and crisp. Having tasted some of the pin cherry yeast entries in the comp I'm not sure that yeast is pushing through very well in this beer, so you may be able to leave it out if you want to brew it again. It'd be interesting to see if the same recipe with just the Amalgamation yeast would be appreciably different. Great job on a very tasty beer.

Nice fruity aroma with a bit of peppery phenols. Low bitterness, the malt character is low in the background and the fruity esters (apples, mix of fruits, and a bit flowerey? that blend together) are coming full force in the flavour. There is a pleasant fruitiness in the finish. Nice carb, nice dryish mouthfeel. Very well made, thanks!
I had Big Spruces 100 yesterday and I find you can tell there they share part of the same character.

Fundamentally a good beer, but something seemed a bit off. I've had the pin cherry yeast before and didn't like it, so I'm wondering if that was it.

I didn't participate in the beer exchange but was lucky enough to get my hands on one. I love it. Tasted a bit thin when I first poured it...but after it started warm all the flavors started to come out. I've brewed a few saisons over the past few months so this is right up my alley. It's excellent...i'm proud to have come runner up to this beer!

I'm not sure I can. There was a hint of 'green'. Not acetaldehyde, per se, but it seemed newish. There was something else, but I really can't identify it (my wife is excellent at that - should have had her try it). It was all pretty subtle. When I first tried the pin cherry yeast in the Big Spruce beer, all I could taste was toothpaste, so as I said, maybe I was picking up the yeast in some weird way.
I drank the whole thing pretty easily, though, so I wouldn't concern yourself with my weird taste buds.

I second this. But the more and more I drank this one. The more I like all the different flavors and complexities in it. Great job! It makes me want to try more saisons now.
