Re: Belma IPA (reposting)
Do I just add the sugar to the boil, or add it to the primary afterwards?

Re: Belma IPA (reposting)
You can do either. I have added sugar to big beers after the ferment is slowing down.

Re: Belma IPA (reposting)
11.7lbs Pilsner Malt
1.5lb Dextrose
.5lb American Crystal 30
This looking more appropriate? Would anyone recommend any other changes to the build?

May want to look at a 90 minute boil to reduce possible DMS from the Pilsen malt. Keep hop addition at 60 minutes though.

Keely's hefe was a 60/40 split wheat/pils. She did a 60 min boil (before we knew better), and holy crackers, that thing is DMSy. You'll almost certainly need that extra 30 mins for ~12lbs of pils. You don't want your Belma IPA to turn into a Creamed Corn IPA!

Re: Belma IPA (reposting)
Thanks. Based on reading and my calcs.
Batch size = 5.5 Gallon.
Adjust for loss to grain absorption. = 1.85 Gallon
Adjust for 90 min boil add 15% = .85 Gallon
So in all I calc my mash volume should be 8.2 Gallons and should finish in around 5.5 gallons after a 90 min boil. Would you say my calcs are about right?

Boil off calcs are pretty much impossible to compare. You'll learn your system soon enough.

FWIW, my boil off for the same pot is 6.67L/hr, so you should be in the ball park. Like X said, after a couple brews you will have it dialed in.

Re: Belma IPA (reposting)
Light color, and sweetness of the malt I think would go really well with the strawberry flavor of the Belma hops. I am really looking to showcase the hops in this beer.

Re: Belma IPA (reposting)
With the below recipe, this is border line DIPA. I think the SRM's and ABV need to be increased slightly. Holy hell I'm excited for this beer! A mouth watering 140 IBU's!!! 76 IBU's from the bittering hops. Would I be better off dropping the FWH additions down 1 oz and the 20 min to 2 oz? or should I just go and put a whole pound of Belma into this beer.

Got to say, Keith, you don't do anything half-assed do you?
In for a penny in for a pound..... of hops that is. Man you must go through some wicked hops. I would say between you, Nash and G. Rock you guys must use up half the hops sent to the Maritimes.

Re: Belma IPA (reposting)
I use to use a lot of hops previously due to the concentrated wort. Now the hops are just put to great use. I love my happy beers. I can't wait to share this in june.

We should look at "provincial beer trades", this way every now and then we can sample everyone's home brew at our meetings.

Re: Belma IPA (reposting)
So I decided to really scale back my 60 minute hops from 2 ounces to 1 ounce. and move that extra ounce to the 20 minute mark. Mash is 154. Going to mash for a hour, then onto a 90 min boil.
Really excited for this beer, especially considering it will be my first all grain batch. Will be ready for June 7th!

So I have in around 5 ounces left. What does ever one think if I dry hop this beer 2 more times?

Re: Belma IPA (reposting)
So the Belma IPA has been done fermenting for a few days now. Just been too busy to keg. I didn't get to the 2nd round of dry hopping as I've been insane at the house trying to hammer out reno's and get cleaned up before the June 7th event. Looking forward to this beer!

Re: Belma IPA (reposting)
I just kegged this massive beer. Dried out to 1.007.
So if memory serves me right started at 1.065 finished 1.007. Does that make this beer 7.5% abv?
