Here's what I'm thinking so far for when my 3711 yest gets in. A little unconventional with some ingredients.

85% German Pilsner - 5.5kg
8% Munich - 500g
4% Amber - 250g
4% Vienna - 250g

mash 9.75 L water at 152 for 60 min
sparge 11.6 L

30 g Tettnang at 60min
30 g Tettnang at 30min
15 g Citra at 5min
15g Amarillo at 5min
15 g Tettnang dry hop

3711 French Saison yeast

FG was 1.004. This yeast sure likes to eat.

Pretty interesting with the malts and the spiciness of the yeast. Looking forward to seeing how it tastes post bottle conditioning when carbonated and chilled.

Had a mess racking it from the primary as the dry hops hadn't fallen out of suspension. I was going to try to save the yeast but couldn't be bothered after all that. I have another pack of 3711. Going to wait until I see what I think of this beer before deciding my next recipe.

That yeast is crazy aggressive. I've never had it finish above 1.004.

Yup, it slowly continued to mow down a beer I mashed at 160.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

That is pretty low, those Saison yeasts are pretty potent, used Belgian Saison III (WLP 585) in a saison recently and it ended at 1.005, O.G. was 1.076. Pretty dangerous brew as you definitely can't taste the 9.3%

Fermenting: Oud bruin/Vienna Pekko SMaSH
On tap: Nelson dry hopped Berliner/ Scottish Heavy 70-/ NE IPA
