Anyone tried the California Common from BCS? I'm thinking about brewing it up this weekend. Thoughts? I subbed MO for regular 2 row.

I brewed it a couple of years ago, but it was the extract version (wasn't doing AG at the time), and I had an issue with a stuck fermentation... even still, the beer was pretty good. Interested to see how it comes out for you, with a proper fermentation!

I did the starter for this...it's the first starter I've done that I plan on actually using, however I took a gravity reading on it and it's only at 1.018. Do you think it will be fine? The smack pack swelled up great, I pitched to a 1.040 wort made with DME, and it's been running on a stir plate for 24hrs. I've got it in the fridge so I can decant and pitch tomorrow.

Oh..the yeast is 2112 - California Lager if that makes any difference.

Probably fine.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

2112 is what I used too... I'm sure you'll be fine. My issue (I think) was that I fermented in the garage and I think the temp dropped below 60 F, so the yeast pooped out and nothing I did could get them going again. The FG was 1.030 or something ridiculous. I'm sure you'll have better luck than I did!

P.s. I think the sub with Maris otter is a good idea. A small dry hop with NB may not hurt, either.

Hopefully it'll be fine. I haven't had much confidence in my starters so far, so haven't actually ended up brewing with one - I have always just stuck with dry yeast unless 1 liquid pack was enough.

Unless youre doing really small beers, and even then, a liquid pack is probly way underpitching. There's only 1/2 the amount of yeast in a liquid pack as a dry one.

Yeah, I normally just go by mrmalty and adjust the mfg date of the yeast.

Jimmy. Keep in mind as well chris' yeast book says lagers usually require 2x more yeast to pitch than ales. So be sure to check Mr.malty for the recommended size.

I selected "hybrid" on mrmalty for this one..I think that's the right option for the California lager yeast.

Tried a hydrometer sample of this today.

I've never tried a California common before, so I've got no clue what it "should" taste like. I do like it though - fruity with some toasty flavor. Seems like it would be a pretty easy drinker!

Grab a bottle of Anchor Steam. That'll be a pretty good benchmark.

Who sells it locally? Last time I was in Premier I looked for it but couldn't find any.

NSLC used to carry it up this way. Not sure if they still have it or not though.

Looks like Premier doesn't have the Anchor Steam on their site (but does have other Anchor beers), and NSLC doesn't have it on their site either.
