2015 Advent December 25 - Shubenacadie Brown

Post by IanWatson » Wed Oct 28, 2015 8:41 pm

Style: English Brown Ale
Type: Partial Mash (though with my equipment it might officially count as steeping...)

Recipe Specifications
--------------------------
Boil Size: 11 L
Batch Size (fermenter): 19.5 L
Bottling Volume: 19 L

Boil Time: 45 Minutes

2.6 kg Light Malt Extract (liquid)
0.6 kg Crystal 30L
0.3 kg Malted Wheat
0.2 kg Chocolate Malt
85 g Fuggles [4.5 %] - Boil 30.0 min
15 g Fuggles [4.5 %] - Boil 2.0 min
1.0 pkg English Ale Yeast (Danstar Windsor)

Mashed/steeped the grains for 45 minutes @ 155 - 158F (don't have the setup to hold temps very steady)

OG = ??? (forgot my hydrometer...)
FG = TBD
ABV = ???

This is the recipe I where I was having trouble figuring out why I wasn't hitting my gravities. I was hoping to use the advent brew as an opportunity to pay closer attention to details... but then in my rush I forgot my hydrometer again. Oh well, in the past this recipe has made some very drinkable beer, whatever the OG and ABV may be. I guess... relax and have a homebrew.

Merry Christmas to one and all!

I hope you enjoy this brew. As your Christmas gift to me I would very much appreciate any constructive criticism you might have. I'm always looking to improve my beers so any identification of off flavors, large deviations from style, etc. are helpful.

Merry Christmas!

A nice brown ale. I think some more of the chocolate and crystal malts for some stronger flavour would do well. Mine was also pretty low on carbonation. A pleasant beer to have by the tree while waiting for more family to arrive for dinner though.

Cheers!

I thought the malt was just right for a brown ale. Mine had really low carbonation which was too bad because otherwise tasted great.

Little disappointed with the carbonation in mine. Think it would have been a decent brew otherwise.

Glad it was tasty. Interesting about the carb. It comes out of the keg perfectly, but I suppose it must lose some in the transfer to the bottles. I'll have to up my keg pressure in the future for beers I plan to bottle.

Easy drinking brown ale with nice flavors. Mine was under carbed as well but nothing to deter me :spilly:
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Mine was almost flat, but this is a lower carbonation style in my opinion so it didn't really bug me. Otherwise a super-solid brown ale that I quite enjoyed. Nice roast on the nose with a bit of sweetness on the palate and just enough hops to be interesting. Thanks!

Mine is flat but I feel there is a beautiful brown ale in there.

A bit dark for the style. Generally low aroma, but has some nice darker and caramel malt character. The malt flavours are a bit muddied, lacking a bit of complexity. The malt character is a bit sweet for my preference, but it fits well for the style. I think the bitterness is spot on for the style. It's got a nice dry finish, but could use a slightly bigger body (maybe try adding some maltodextrine or hone in on your mash temps?). As others have mentioned the carb is a bit low, but it suits the style. But it is a definitely easy drinking beer. Thanks
