2015 Advent Dec 19 B - Crazy Grouse 30 Min Pale
Well folks, you get another experiment from Crazy Grouse this year!
This summer I had plans to do a pale ale and figured the best way to get the volume I wanted was to brew a higher gravity wort and water it down to a desired OG. I also thought "why not give continuous hopping a try?" In order to maintain my sanity, continuous hoping evolved in to "grab a handful of hops every 5 minutes.' Life got in the way and the brew session never happened, so I dusted off the recipe for the exchange.
Here's what went into Beersmith when planing the recipe. Worried that I wasn't going to get the volume or gravity I was looking for I adjusted everything upwards by 10% on brew day.
6000g Pale Malt (Ashburn Mild Malt) --> ended up using 6673g
1500g Munich --> ended up using 1691g
500g C-15 --> ended up using 589g
Mash with 23 l water at 70C
Sparge with 27 l @ 75C (split into 2 batches)
Hop bill (beersmith recipe)
10g cascade 30 min
10g chinook 30 min
10g warrior 30 min
10g cascade 25 min
10g chinook 25 min
10g amarillo 20 min
10g simcoe 20 min
10g amarillo 15 min
10g chinook 15 min
10g cascade 10 min
10g simcoe 10 min
10g chinook 5 min
10g simcoe 5 min
10g amarillo 0 min
10g cascade 0 min
On brew day, I realized I had no cascade so I substituted with centennial. For the 'continuous hopping part' I measured all the hops into one large container and threw in a handful every 5 minutes. The first two additions (30 minute and 25 minute) I realized I was being overly generous with the hops and there would be nothing left by 10 minutes. I added a generous amount of amarillo, simcoe and chinook to the measured hops.
At the end of the session I ended up with 34 litres of wort at 1.052, which I then diluted with 4 litres of water to bring me to my target OG of 1.047.

I'm just gonna apologize in advance...
I sampled my beer last night and it is not good. More astringent than hoppy which is a little baffling since the hops were all added 30 minutes and later. I also got something a little vinyl-y on the back end.

Yeah, something's not right with my bottle either. I can't point to any particular off flavors, but the bitterness is pretty overwhelming. There's some nice hop flavors lurking underneath, and a hint of the malt, but it's just too harshly bitter to be able enjoy properly. Thanks though, I hope you give the continuous hopping another try sometime; I'm super-curious whether it can really work on a homebrew scale.

Intense with a dry mouthfeel. Some nice aromas and flavours but the body doesn't hold up to the bitterness.

Well not sure how this is possible but mine tasted fine. Bitterness was a bit over the top for an apa but still enjoyed it. Sheesh starting to question my own taste buds.

Just drinking this now. Mine isn't infected, but man, that's a bitter meat-a-ball! I'm not going to get all sciency like the judges, but I would describe the beer as angry. It just tastes angry. After 3 drinks the bitterness is not overwhelming, and like Adam said, I'm in the mood for something like this tonight, been a rough day.
