Anyone have "go-to" Christmas ale recipe? I am thinking I should get brewing on something for Christmas....

Here is a winter spice ale recipe. I got the recipe from the Jamil Show (http://thebrewingnetwork.com/shows/The- ... w-09-24-07), and modified it for a partial mash with a lower original gravity. At botteling time it tasted great, with the spices coming through but not too intense.

Batch size 22 L
60 min boil
Mash: Starting at 68C then decrease down to 65C over 60 min. A water to grain ratio of 3.14 L per kg of grain.

Malt
3.200kg Light/Pale Malt Extract Syrup
2.400kg British Pale
0.170kg Crystal 60L
0.170kg Crystal 120L
0.113kg Black (Patent) Malt

Hops
boil 60 mins 25g Galena

Spices
boil 1 min
1/2 teaspoon of cinamon
1/4 tsp ginger
1/8 nutmeg
1/8 allspice

Danstar Notingham (2 packs)
Ferment at 20 C
Carbonate to 2 volumes
