Hey all,

I need some help with a family challenge. I have an uncle who used to brew back in the late eighties and early ninety's and gave it up. nowadays he is a die hard Keith's drinker. in the last couple years we have gotten him out to a few beer fests (Mondial and Seaport) and he has started to broaden his beer horizons. He has challenged me that he would get back into home brewing with me if I could show him how to brew a Keith's. I am looking for an extract clone recipe if one exists. Any help would be hugely appreciated.

Well, I think you need about 1/3 flaked corn (at least) to start with. Can you do extract with adjuncts? I don't think corn syrup would give you the same effect.

I had a similar situation.
I've made the cream ale from Brewing Classic Styles (I did all grain, but the main recipe is extract) and substituted the rice for corn as it suggested as an alternative, and I used EKG hops. My Keiths drinking friends actually liked it a lot and I have brewed it many times for them now - more flavour, perhaps? It's a light ale with not much else but a hint of hops and some of that corn flavour. A good lawnmower beer. The recipe in Brewing Classic Styles is called Weed, feed and mow.

While I never intended to clone Keith's, I did make a beer for a Keith's drinker that he quite enjoyed.
75% 2Row (which you can sub in light malt extract)
15% flaked corn
7% Crystal 15
3% Crystal 60
Hopped to ~20 IBU with Goldings
Nottigham dry yeast or some other neutral yeast

If it needs to be all extract, you could prob sub out the crystal malts for a small amount of amber or dark malt extract. I don't think corn sugar or corn syrup is going to get you where you want, but it might be worth a shot in small test batches. Besides, you might get your uncle more intrigued and involved if you bring him a couple small batches every once in a while, trying to tweak the recipe and dial it in. :)

Thanks for the info so far guys. I can do partial Mashes, just don't have the equipment for all grain yet. I'll give that Recipe a shot Andy. Definitly agree, hopefully I can get it working close enough so that we can work to get it to where he wants it. I'll let everyone know how it turns out.

I gotta believe the percentage of corn is closer to 33%. You'll have to get a can and measure the fg, and then calculate the og.

I'd take X's advice & jump up the corn from my 15% - like I said, I wasn't trying to clone it, just brew something a Keith's drinker would like.

This recipe came out OK for me when I was just starting out and NG sells a Morgan's product that claims to be a Kieth's clone, it comes in a green can and there's even a stag on the front.... you have to do a partial mash though to get stellar results but you shouldn't have much difficutly especially with all the assitance from the guys here... they can give you great hop advice too as I wans't sure what hop to use so I picked Northern Brewer, ... this is sure to please...


1 Morgan's Canadian Pale Ale Kit
5 lbs Canadian Two Row or 2 lbs of LME
1 lb cyrstal malt
1 oz northern brewer at beginning of boil
1 oz northern brewer at 15 mins left
1 Safale 05 American Ale or 1 smack pack of Wyeast 1056 American Ale, prodcues a very clean taste.

I've used the NG Cream Ale recipe for a keith's drinker and it passed with flying colors. The recipe is as follows:

I think John is on the right track with this one but I'd make a few suggestions.

- Corn would be best but corn syrup sucks and you'd need a good load of other malts to convert flaked corn so rice syrup and candi sugar are great ideas.
- Control the boil / evaporation rate to leave a good dose of DMS in the finished product for that wonderful corny flavour. Keith's signature flavour is DMS.
- You need to basically stay away from crystal malts in this or you'll have way to much colour, you'll have way too much colour even if you use all pale extract so the Pilsener extract is important... and colour can be very offensive to Keith's drinkers :lol:
- Initial gravity should be around 1.046, FG should be around 1.008.
- Fermentation temps and yeast pitch temp should be on the lower side of things ~ 64 F.
- Fuggles or golding should be the hop of choice.
- Shoot for around 13 - 14 IBUs with a 60 minute hit, for finishing hops about 1/2 oz 10 minutes before flameout.

Just make the 1917 Keith's recipe and knock the ibu down to 30. The Keith's drinkers at home still bug me to make more of that for them. Does it taste like 'Keith's' - no. Does it say Keith's...;)

Could you please post the recipe for the 1917 "original on this thread? Even better if you could send me the beersmith file, I would appreciate it. I got it on the old brewnosers listserv, but I can't find it. Might be an excellent "beer education tool" for summer visitors.

How does the Festabrew Cream Ale compare? I have not tried it, but if he were just getting back into brewing, it might be an easy, transitional option. Anyone have experience with it?

That was one of the first beers I've made, and as far as festa stuff goes, it might be as close as you can get. Although the Cerveza might be closer.
