2016 Brewnosers Competition

Hey guys,
When you bottle your beers for big spruce and the Decembeer exchange (or just from everyday brewing) . Be sure to fill 2-4 extras of any style that will store well for 5-6 months. This way when the Brewnosers comp comes around next year we already have a good base of beers to submit. This is a great way to get ahead of the rush. As for long term storage be sure to purge your bottles of oxygen.

If you want some inexpensive bottles. Faders in Lr sackville sells them for $2 / dozen.

I have a freezer with controller set to 2C. I find beer keeps for extended time at that temperature.

Some styles improve a lot with age and would be better stored at cellar temps, but that's a good thought for anything that you want to try and keep a bit fresher!

I haven't been able to figure out if a beer that needs to be aged will age at lower temperatures (like in a fridge) than cellar temp. Do you know the answer?

I have not personally done a comparison - my cellar is 10-15C year round, but have had great results. Here is a blurb from this book http://www.amazon.ca/Vintage-Beer-Taste ... ntage+beer:

" Rule No. 13: Beers should be cellared below their fermentation temperature (65F/18C for ales, 50F/10C for lagers). Cellaring beer at the appropriate temperature allows it to remain in its natural state. Too hot, and new chemical processes start to occur, leading to unexpected, often bad flavors. Too cold, and the beer will develop at a crawl, which can halt some of the beer's natural processes. Staying 10F (5C) below fermentation temperature seems to optimize development, making a 55F (13C) cellar ideal for ales, which comprise the vast majority of vintage beers."
