Re: Garrison Homebrew Comp
Picked up my sheets today no problem. I scored a 36 but the feedback was largely that it was too dry and not roasty enough for the style. I think my efficiency is off but I quite like the beer regardless! To correct for esters - I'm assuming to ferment at lower temps, is that correct?

Re: Garrison Homebrew Comp
Choice of yeast and fermentation temperature will affect ester level. Fermenting at the lower end of the yeast's temperature range will result in less ester production.

First question ...are esters a bad thing or a good thing?bandarker wrote: To correct for esters - I'm assuming to ferment at lower temps, is that correct?
If it's a north American lager, they need to be toned down a lot. Correct me if I am wrong but most ales are supposed to have esters. Especially English ones. I think it's a north American thing to use "clean" yeasts like US-05 and 1056.
Ale yeasts produce high levels of esters and lager yeasts have low levels.
For this style the BJCP guide says "fruity esters moderate to none"

I think, keep making beer for your own enjoyment. Forget the judges and focus on what you like. At the same time reading a lot will give you the skills to make yourself a really good pint. You'll know when you are there, because you will prefer it to anything else you can buy. Then send it in to claim your 50 points. You'll get your score sheets back and they will say 30 points. You know it's good, so you send it off to another competition. They write back and this time it's a 40+ beer.bandarker wrote:Fair enough! What I want to know is how to get closer to the 50 score
And of course, it has to be to style. Read up on the style (BJCP).

Re: Garrison Homebrew Comp
I think GRock's suggestion is a good one. In judging, there is a human element in there that just cannot be overcome. While there may have been a problem with any given beer, or not, we're relying on people to judge each beer in a flight in exactly the same way, and the same by different judges during the same competition. And, sadly, that will never be the case. The best we can hope for is fair and blind judging against the other beers in a flight, and honest and useful feedback, and that the beers most closely exemplifying the style being rewarded (this will not necessarily be the "best" beer). Hopefully you received both honest and useful feedback from your entry.bandarker wrote:Fair enough! What I want to know is how to get closer to the 50 score

Re: Garrison Homebrew Comp
Oh dear. I'm a bit scared to judge this one! While I'm sure there will be some interesting beers (some of which will be good), I fear there will be a bunch of real bad stuff too... Not from Brewnosers, but historically this comp seems to bring a lot of people out of the woodwork (I suspect for the admission to the after party).

Does experimental mean beyond the specialty IPAs in the new 2015 guidelines (black, brown, red, white, Belgian and rye, in regular double and session strength)?

Re: Garrison Homebrew Comp
I have a couple of ideas, just don't know if any of them will actually be any GOOD - lol! Given that the style announcement is 2 months later than last year, hopefully the submission deadline will be pushed out by an equal amount? Otherwise mid-Feb doesn't give much time to experiment....

I figure it's fruit and or/spices or other finings to an IPA.GAM wrote:What does experimental mean I googled it and got little.

Re: Garrison Homebrew Comp
Not having any additional information to go on other than the poster I'm hoping it means it's completely wide open: as long as you're making a light-to-medium bodied beer with relatively high bitterness and hop flavor, go nuts with whatever fruit, hops, non-hops (spices or alternative bittering substances), brett, lacto, low alcohol, ultra-high alcohol, etc. If that's the case there's a huge potential for undrinkable mistakes but I suspect there will be some brilliant results too.GAM wrote:What does experimental mean I googled it and got little.
