Sounds tasty. Was it like a Belgian Pale Ale, or did it come out more like a Belgian Blonde? Never used that yeast before...mr x wrote:Get in line amateurs.![]()

Yeah this at least gives me a head start towards perfecting a recipe. This one is on the bottom end of the OG scale but the high end of the IBUs.mr x wrote:Use that blond as a yeast starter.
If it was me to do over again, I'd use a wyeast strain. Ardennes if it's available, or 3522.jeffsmith wrote:Nice timing, just got a few packs of T-58 the other day.
I've got some washed WLP550 that I'll likely use as well. Will probably split a 10gal batch between the two. Did you ferment the T-58 warm or cool? What didn't you like about it? Just want to know what I'm getting into before I use it.mr x wrote:If it was me to do over again, I'd use a wyeast strain. Isn't 3522 actually the Ardennes strain?mr x wrote:If it was me to do over again, I'd use a wyeast strain. Ardennes if it's available, or 3522.jeffsmith wrote:Nice timing, just got a few packs of T-58 the other day.
It is. I also see that Brewers Pantry has 3864 and 3538 in stock:berley wrote:Isn't 3522 actually the Ardennes strain?
Feb 25 IIRC.amartin wrote:Does anybody know when the submissions are due?
I've used the 3864 before... it definitely has the "Unibroue flavor" that you can expect from their beers.jeffsmith wrote:It is. I also see that Brewers Pantry has 3864 and 3538 in stock:

Rob's right - Feb 25. http://noblegrape.ca/newsletters/xmas20 ... sletter#/5amartin wrote:Does anybody know when the submissions are due?
IMO it's best to keep it cool at the start and let it free rise. That helps to keep the esters manageable.jeffsmith wrote:Did you ferment the T-58 warm or cool? What didn't you like about it? Just want to know what I'm getting into before I use it.
Yeah you are right. I was thinking that was the dekonick vss number. There is another vss strain they release.berley wrote:Isn't 3522 actually the Ardennes strain?mr x wrote:If it was me to do over again, I'd use a wyeast strain.
