This works out great because it's not a beer I would search for or anything but it's gonna be nice to have a few Kegs of this when I head home for Christmas. Definitely will be a crowd pleaser. By then I'll know how to brew it.

I think I'm going to give this one a go too. Need to do some reading first though. Anyone have book recommendations for designing beers? I'm starting to read the Brewing Classic Styles book and it's pretty great so far

Brewed one over the summer, based it mostly off of the BCS recipe. I ended up only being able to use Wyeast 2565 and next time would try to use WLP029 since 2565 did not drop clear (some people might not care about a clear Kolsch but I wanted one) even after a 3+ weeks cold crashing in the carboy and a month on tap.
On tap: APA, Dubbel, Dark Mild
Fermenting: Brett Saison 2022, Schwarzbier, APA, Sour Brown,
Coming up: American Wheat (Fruited), Vienna Lager, Dortmunder
Bottled: Brett Saison 2020, Brett Saison 2021, Baltic Porter

Just doughed in a 10 g batch of a Kolsch for this. 1 keg for my work Christmas party and the other to lager for the competition. Yeast stepped up and ready to rock n roll!!

Should see some renewed interest based on the style.

I've made this style lots of times. Personally, I preferred Wyeast 2565 over WLP029. I let it lager for a couple of months every time, so it was always pretty clear.

I'd suggest reading this book - https://www.amazon.ca/Kolsch-History-Br ... 937381586/

Yeah, good book, shhhh... ;)

I may enter this but probably won't brew it until the new year.

Really? I guess I rushed as I needed it on tap for a party, regardless I did really enjoy the fruitiness it brought to the beer though!

Also agree with that book choice, it's a great read! I have e-book copy of it if anyone wants to read it.

Does anyone have experience with using Safale K-97 German Ale yeast for this style of beer?

Nope. Everwood brew shop gets white laps kolsch yeast in though. Check them out. I'm doing my first batch with it right now.

I need beer glasses like I need another hole in my head, but I may just have to get some, even if it really is a dumb way to drink beer. :)

You typically need several, since I think they're only 200ml. As I said, a dumb way to drink, but that's how they do it in Cologne.

If that's the way, then that's the way...when in wome, do as womans...I often use the little flight glasses at home to pretend I'm at the brewery lol.
