So, do you have any left, like maybe for Saturday?Tim Gregory wrote:That's me! My Belgian dubbel won gold! Congrats Tim, Sean & Kyle. A big thanks to TonyL for the APA recipe (even if I didn't use the citra hops).

Is there now another level for a best beer award at that competition?

Re: TO Beer Week Contest - we have winners!
I think I have a few bottles I can bring.
The gold medal beers all go through to the next round (judged this weekend) with a bunch of prizes. Apparently I win something but what it is depends how it does in the finals.

I am thinking we should have a forum dedicated to award winners and upcoming competitions. It would be a good way to keep up the visibility and encourage people entering.

Great Job everyone and good luck in the second round Tim. We are starting to gain some momentum

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Nice work to all the medal winners! I would be curious to hear the details of the winning beer recipes, if you'd rather keep them closer to your heart that is cool too. Just hoping to learn a little bit of what makes a good beer (recipe at least).

That's something else I'd like to see as well, unless the winners prefer to keep them secret (*cough* repackaged a bottle of Westmalle *cough*).

Well done on the awards guys! Awesome news all around.

If it's anything like the IPA category at the CBAs a repackaged Westmalle would get docked points for being "too Belgian".mr x wrote:That's something else I'd like to see as well, unless the winners prefer to keep them secret (*cough* repackaged a bottle of Westmalle *cough*).

The recipe on this was pretty simple. Pilsner Malt and probably aboutg 25% of that dark candy syrup we got in, and I think a tiny bit of Carapils. One early addition of saaz. Fermented on the chimay yeast.
I read Brew like a Monk and did pretty well everything he said. Kept the grainbill simple, maybe underpitched a little, fermented it warm, and lagered it.
My complaint about this beer is that it has no foam stability. The head is gone after about 30 seconds. I thought I'd get dinged for that.

My 'secret' ingredient was demerara sugar. The magic was performed by the 3711 French Saison yeast. I have some WLP565 Belgian Saison I Yeast and hope to try that in my next saison.
Tim, I'd like to take a look at Brew like a Monk (if it's yours to lend).

Simple, but I bet the quality ingredients made the difference, the syrup in particular.Tim Gregory wrote:The recipe on this was pretty simple. Do you mean you used citra instead of cascade?

No, the other way 'round - I had no citra so used cascade instead and then dryhopped with amarillo (if memory serves).

Congrats guys, so glad to hear about the medals, and the rest of us jokers who entered but didn't place will have fun reading the notes. I suspect both of mine were undercarbed (at the least).
