Re: Garrison Comp
....just been researching Weizens. Might have a crack at designing one in BS. Any tips please? I was going to use Safeale WB-06 dry yeast, Pilsner malt as base. Supposed to have wheat malt as well, white wheat malt or normal? I also need to figure out the hops, but I have an idea using a noble hop that I really like. Can I use a noble hop from any continent? OK to use Whirfloc?

I'd definitely use the liquid yeast. And no whirlfloc.

Greg Nash, If you see this. Do you have any tips for us on Weizens please. I notice in one of your posts you said combined pitching and fermenting temp 30C and no less than 45% wheat.
NASH wrote:Sounds good, it's almost like you thought about it![]()
Rule of thumb for brewing Weizen from old country....
Pitch and fermentation temperature combined should equal 30 C. Some breweries pitch at 13 C, ferment at 17 C, some 14 and 16 etc. I adhere to this rule when brewing German-style Weizens. For the yeast, it works. For minimal yeast phenols, use smaller amounts of Munich/Melanoidin/Vienna-type malts. For more, use more of those malts. And never brew a Weizen with any less than 45% of the total grist bill as wheat. Otherwise, you'll be thrashed at town square by brewers from old country

Don't use floculant on a wheat beer. I like 3068.GuingesRock wrote:Thanks. Why no whirfloc? is that WB-06 dry yeast terrible?

We're not sure about the difference between the dry and liquid yeasts so we're going to try both, each in its own mini-batch, to see for ourselves. This is apparently one of Ed's favourite styles so you might ask him for tips next time you're in.

Re: Garrison Comp
Kirsten, I've been researching it all day. I even Googled how to pronounce the damn stuff and listened to an MP3 of a German saying Weizen. I harassed a certain brilliant Brewnosers by PM, poor guy, I'm sure he has enough to do, but he was so kind and generous. I wanted bubble gum and banana to go with my hops I picked. I posted on here looking for info. Do you want to pool our research and enter this together as a team? Pick Ed's brain and anyone else you can find. JPHunter too, since he's doing a brew with you this weekend. I hear he's picking you up and all your stuff and taking you to his brewery to do your first brew. Nice guy. All the Brewnoses are so bloody friendly and helpful.

There are weizens at the NSLC, why not buy one to try one? Erdinger.

Re: Garrison Comp
So as far as I can tell, most Weizens are listed as Wheat + Pils + Yeast (give or take). What do you guys predict will help separate the entries apart? Methods like temp control or decoction? Or quality/source of ingredients?

First more than the second AFAIAC, but I see no reason not to use quality ingredients. Might be nice to throw in some hard winter wheat. I've done it and been quite happy.

That's the plan for us, anyway. Sadly, we made the mistake of going to the Berwick NSLC where we had our choice of Molson's (or maybe Moosehead?) or Keith's wheat beers. Probably wouldn't be overly helpful.chalmers wrote:There are weizens at the NSLC, why not buy one to try one? Erdinger.

We'll stop in a better NSLC when we get the chance and buy a few different types if they've a few available. I'm kind of excited to try my very first weizen. Yay for new styles!

Re: Garrison Comp
Strange, Berwick shows 36 bottles available. Maybe they had a run on them on the weekend.

It's always possible that I've just missed it in my tour of the store. Not unheard of for me. And for some reason, I always forget I can search these things up on their website. I have a Luddite streak.chalmers wrote:Strange, Berwick shows 36 bottles available. Maybe they had a run on them on the weekend.

If I get a chance, I'll pick up a couple tonight or tomorrow.

Be sure to check the BJCP guidelines to get an idea of what the judges are looking for.

also Garrison posted a weizen on their facebook page a while back that suggested what they would be looking for. I forget what it was though.CartoonCod wrote:Be sure to check the BJCP guidelines to get an idea of what the judges are looking for.

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.
