The beer will be fine - the kegs should hold pressure like you said. Mine are stored that way all the time.

Yes, it will be fine.

One thing to note though - the fact that you enjoy the end of the keg may be due to it being stored in the fridge, and the colder temp is helping to clear the beer. This may not happen while it's sitting at room temperature.
