Pretty Sure This Beer Will Be Fucked

Had a German Pilsner (with white labs bock) fermenting away for 3 days at 11 C for three days. Went to check on it this am and something with my temp controller got fucked up and the temperature probe was reading 1.5 C. The blow off solution was frozen, the krausen was gone and looked like the yeast stopped working. I didn't have time to take a gravity reading as I had to get to work. I Unplugged the temp controller and got everything working again, set it to 12 degrees and went to work.

When I got home the temperature was 12, another krausen formed and the yeast is just as active as yesterday. I'm going to let it finish for another 3 weeks but I'm guessing there is going to be something wrong with it, yes?

I can't answer your question, but curious what temp controller you're using?

The one from Daves that looks like a power bar. Has always worked well in the past.

I have a feeling that if you let it finish up, do a d-rest and then lager it'll end up being perfectly fine.

Yeast is probably more resilient than we tend to give it credit for. The revived activity sounds promising to me!

Your beer should be fine. Too low temps on lagers are not uncommon occurrences. Palmer even writes about his experience freezing a carboy solid in his book: <http://www.howtobrew.com/section1/chapter10-6.html>. If you got krausen again that fast, you've still got lots of active yeast in there. They'll do their work.

Got an STC-1000 from Dave last grain buy, heating works, cooling not so much - absolutely no voltage. Guess I bought a DUD. Not shittin' on Dave, just saying that sometimes you get what you pay for, not like it's made in Canada or Germany or some place other than China.

I've also had trouble with that controller (also on a lager), and had to exchange it. Started sending power to both the hot and cold side at the same time, as well as measuring the temp wrong.

I'm running 2 stc1000 and one of those power bar controllers...Ive been lucky...they have been working perfectly since I installed them

I would be more concerned if ur lager shot up to 23c...If it gets cooler than expected I just raise it back up and give the carboy a lil swirl to wake the yeast beasts back up

I have 2 stc 1000 controllers for over 5 years and both have worked fine so far.

This is probably leading/continuing the hijacking of this thread's original topic, but I've been considering picking up an Inkbird ITC-308 to replace an AC-211 that doesn't quite work right... http://www.ink-bird.com/product/detail/ ... ller/id/12

$49.99 on Amazon.ca with free shipping, but I've seen it on sale there a couple of weeks ago - kinda wish I had pulled the trigger.

It's currently $35 USD on Amazon.com. Our current weak dollar isn't going to help our price any...

Pretty good price if it's works good. The STC-1000 prob costs that much by the time you build it out.

Hey All,

I will be bringing these into the store. While I personally have heard of few problems with the AC-211, these are getting great reviews and the brewers have spoken.

Hopefully in the next couple of weeks.

Well after 2 weeks in the primary we are down to 1.011 and the estimated FG is 1.010. The sample tasted pretty good. Going to ramp up the temp now and probably give it another week on the yeast before lagering.

FYI this beer actually turned out quite nice. So almost freezing your beer mid-fermentation isn't as big a deal as it sounds.
