Beer in the Carboy

Post by dase74 » Sun Aug 31, 2014 4:26 pm

I need some advice. I have two NG "Beer in a bucket" brews underway (Basic Red/Clear Glucose & Basic Blond/Clear Glucose). I am gearing up a keg system (two 30L Sleeman Kegs) but don't have the fridge or Senke valve yet (still needed). The beer is in the carboy and has been ready to bottle for about 7-10days. How long can it wait in the carboy before carbonating? I really don't want to bottle it!!!! I have not removed the air locks, but it is nearly equalized (no more co2 activity).

I leave it in the Carboy a minimum of 3 weeks, and as long as air lock is there you should have 3-5 weeks is my guess. Others with more experience may be able to offer different / better advice.
I leave that long so the beer clears better.
Cheers.

Did you do a one stage or two stage fermentation? If one stage it should be good for a month or two on the yeast cake. If you have racked it into a secondary, don't worry about it. It will be good for a long time. I some times keep beers in a secondary for a couple of months.

ok thanks guys. It was the simple bucket kits from NG. I fermented in the bucket for 5 days then transfered into the glass carboy about 4 weeks ago, and activity stopped last week in the air trap. No bubbles but still a little pressure on the water. I will wait to find a fridge so I can keg it at the right temperature (thanks for the advice on that happyhopper!).

Now I need a garage fridge!
