5% beer, by the look of it 5 SRM? I never tasted it so unsure how bitter it is. But someone compared it to St. Ambrose Cream ale which is 35 IBU, but that is high for this style.
From what I read, I'd probably go with a 60/30/10 (%) of Pilsen LME/Golden LME/Dextrose. And try Sorachi for a hop, I'd aim for 15 IBU's. half on bittering and half on flavor\aroma.
Below are a few notes I found.
COMMERCIAL DESCRIPTION
Named in honour of our French Roots. Copper in colour with a light malt flavour and a refreshing finish.
Reviews state: Lemony Earthy Hops.
Someone compared it to St Ambrose Cream ale, which uses Cascade, Willamette, & Golding hops
Calypso (US)
AA Range: 12-14%
Characteristics: Lemony aroma, tart apple, earthy tea.
Sorachi Ace (Japan)
AA Range: 12 - 16%
Characteristics: Lemony, Lemongrass, lemon-cream flavor.
Motueka (NZ)
AA Range: 6.5 -7.5%
Characteristics: Lemony, tropical fruit, spice.

I was at Paddy’s last year. I sent some AVA back as I thought it was a bad batch, and had a cream ale, not sure if it was the same one, but I liked it. I think redoubt were there also that night. I seem to remember asking the barman about it, but they never tell you ingredients there, at least I’ve never had any luck.

I have never tried that beer, but for a basic easy drinking cream ale, I would go for Weed Feed and Mow from Brewing Classic Styles. You can then modify it by comparing that to the Paddys cream ale and make adjustments next time you make it.
