I have a kit lager brewing with 840 American Lager yeast.
I don't want to tie up the fermenter too long so how long till I should put it in a carboy?

What temp was your wort when you pitched the yeast? Are you going to do a D-rest? My latest lager was in the carboy for 17 days after I did a D-rest. I pitched my WLP940 @ 48 F but did a D-rest anyway.

12c, it's chugging along slowly. My plan was to hold on to the carboy till the summer so that should allow for lots of rest time.
Can I expect after 7 days the fermentation will be calm enough to transfer or should I wait longer. I can also watch the gravity.

I would wait myself. Lagers work slow. I waited until the foam was just starting to drop and did a D-rest. That was on day 14. I never took a gravity reading or even tasted it until I kegged it. I did smell it though. The beer fart smell was gone by the time I kegged it. I do find personally, lagers to be very challenging. I got a lot of info from this guy who makes a lot of lagers. It's his brewing blog.

I did my D-rest before I transferred to my keg/secondary. I am not 100% sure about that though.
