Rogue Fermentation

I missed a couple of numbers when I was brewing last Friday and ended up with an extra gallon of wort. I had a good boil going too, so there must've been something wrong with the recipe. I'll check that later.

I left the extra wort in this gallon jug with a sanitized bag bound around the lid until I could figure out a way to rig up an airlock or blowoff tube. Last night I was walking by the jug and noticed that there was foam around the top and bubbles rising to the top of the liquid.

Could this sucker have picked up some wild yeast and started fermenting? Should I let it keep going with this rogue yeast?

It seems to be a very healthy ferment so I would say you got your self a wild one there. Let it ferement out and give it a taste. :cheers3:

That's weird. Way too much action there for some trace yeast pickup. Looks like a full pitch of -05....
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

I had success with my spruce IPA extra gallon fermenting off what was in the air. For a gallon it's worth finding out how it turns out.
