I did my first extract recipe last weekend, checked it yesterday and I'm almost at FG. I'm skipping the secondary for the first time and after reading some Palmer and a few forums, I can't figure out how long I should let it sit after I hit FG consistently?
Leaving it sit is just going to help clean/clarify right? So would cold crashing it help me here too? I have one very cold closet I could tuck it into.

It can also help the yeast clean up after themselves and remove some off flavors. A total of 3 weeks in the fermenter is what I usually aim for.

Yeah especially if it was fermented too hot or if it is a strong beer, leaving it longer helps the yeast clean up off flavours. if neither of these things, 2 weeks can be enough (though 3 is better). Cold crashing will help it clarify too

Keep it cold and watch out for airlock suckback.

This was kind of what I was expecting as an answer, so I'll let it keep doing it's thing at room temp for the rest of the week and stick it in the cold closet next Saturday for a week. Thank you good sirs!
