ESB

Post by Dirt Chicken » Tue Jan 08, 2013 2:10 pm

hey guys today I want to make an ESB, using some marris otter and Wyeast british ale yeast. I was thinking about placing my recipe on something from bcs, but there is no mention of using this yeast for an esb in the book.

Wyeast british ale, should I maybe just be looking to make a straight up british ale then?

Though it's not listed as a suggested beer style, why not give it a shot?
YEAST STRAIN: 1098 | British Ale™

This yeast allows malt and hop character to dominate the profile. It ferments dry and crisp, slightly tart, fruity and well balanced. Beers will finish clean and neutral. Ferments well down to 64°F (18°C).

Origin:
Flocculation: Medium
Attenuation: 73-75%
Temperature Range: 64-72 F, 18-22C
Alcohol Tolerance: 10% ABV
Styles:
Blonde Ale
English Barleywine
Northern English Brown Ale
Robust Porter
Scottish Export 80/-
Scottish Heavy 70/-
Scottish Light 60/-

I think ESB would be fine with it.

That' s the yeast i use in my ordinary bitter and it turns out great, I don't see any problem using it in an ESB.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

It's just a more neutral yeast compared to the other English strains... Should still be fine, just may not give as much in the fruity esters category as 1968, for example.

I've always got suggestions... I've been using either Ringwood or London ESB

The one I was serving when you guys were out in September is:

2kg Crystal 60
7kg Maris Otter
100 g Flaked Wheat

Boil:
85g Centennial for 60min
55g Centennial for 30
20g Centennial for 1

London ESB yeast
Makes 40 litres.

If I ever manage to figure out how to attach the BeerXML file, you'll see double in the hops section, because it includes the EKG hops that I only realized I was out-of when I started my brew day, so I substituted with smaller quantities of Centennial (8.9% alpha)

@Jimmy, why on earth can we not attach XML files - especially BXML files! And how do I figure out what sort of files I can attach?

It's attached as a .txt file...

I haven't made a bitter ever, any recipe recommendation, ie: Harvey's Better?

Can't we attach beersmith files on the for Jimmy? Also on a side more, can beersmith import different recipe formats from other programs? Like I can import cad and 3dsmax files into Alias Maya?

Pretty well everybody does BeerXML. This one was exported from Brewtarget, and then imported to BeerSmith. The one I have in BeerSmith, now, doesn't actually look like that :)

That's not the only blue flame I've been known to produce.
