One week till beer?

Breaking a year long dry spell on brewing (I was away in Michigan). It is my birthday party on the 29th. I would really like to have a batch brewed up, but don't want to disappoint myself after a long hiatus. I am coming down to Halifax this Weds. to pick up grain, but with work schedule, etc., I won't be able to brew until Thursday at the earliest (and probably Sat.). I keg, so carbonation isn't an issue, but having never had that quick a turn around, thought I'd check the experience of other people here regarding whether the effort for such a young brew is worth it. I plan on pitching Wyeast 1098 or S-04 for the fast ferment and flocculation (fermented cool). I was planning on sticking with a simple hoppy red or an IPA. Probably 4 days fermenting and then cold crash for 3. Fast force carb and serve.

Thoughts or suggestions?

Jason

You can definitely do it.

S-04 rips through sugar - I'd pitch like 20+g and I bet you'll be converted in 4 days or less.
