Brewing with sap

I’ve got a few maple trees tapped around the yard and have been collecting and boiling the sap to make syrup. Does any one have any experience using sap as opposed to water to brew? Just curious at this stage, but would be interested in knowing about it if anyone has attempted it.

Yes I've tried doing this several years ago. Honestly, the sugar in the sap ferments so clean and bland that the resulting beer does not have any maple flavour. I also had the opportunity to try sap that was boiled to 1.040 then fermented and the result had no maple flavour. If you want to give your beer a maple flavour I recommend adding a teaspoon of maple syrup to your finished beer. But as for using sap as your liquor you can do it but it is similar in the end to using water.

I figured that might be the case, especially considering when boiling for syrup the fact that it takes a long while until the sugars are acutely noticeable. Thanks for the info!
