Voss Kveik ceiling temperature
Hey, I pitched Voss kveik at 40C yesterday, but haven’t seen any fermentation action even close to what I was expecting - it’s been pretty slow.
Last time I used Voss, I pitched at 32 and within an hour my airlock was bubbling at a ridiculous rate.
Anyone have any experience with Voss and has found a “sweet spot” temperature?

Is it possible that it finished overnight? I had a batch accidentally get bumped up to 50C, and it finished fermenting overnight, we never saw any airlock activity because if finished so quick!

Yikes, that didn’t even cross my mind as a possibility. Will check the gravity. How did that turn out?

Decent - it did weird things with the bitter orange additions, it scored around 34, but I entered it in the wrong category so that super burned me.
Also noteworthy was that it is probably the clearest beer I've ever made, and without any lagering.

OG was 1.064, it’s sitting at 1.030 now, so it’s presumably still got some chugging to do.
I will say that I notice the orange a lot more than my last batch (perhaps a result of the higher temp?).
I’m excited for this one to finish up. Should be good.

Two heat belts, didn't think it would hit that high, used my temp controller on the Belgian I was fermenting at the same time.KMcK wrote:Do you live in a sauna? Sometimes if the seal on your fermentor is going the gas will escape around the lid instead of through the airlock

I pitched a 4L starter of voss kveik (from a single homebrew vial, done on a stirplate) into 750L at 35c, it free rose to about 39 and then dropped back down to my 20c-ish ambient temp. Uninsulated stainless steel flat bottom wine tank. I do think you can get weird flavours with these yeasts if they stay hot after they're done or almost done so I wouldn't actively heat a ferment with them personally (maybe stick your bucket in a sleeping bag to emulate the extra thermal mass of a larger ferment letting it stay hot a little longer) and instead just pitch hot and let it ride.
