How long have you had those sitting in the carboy?
How do you store that oak stick (so that you can use it in a latter brew)?

The Flanders Reds have been sitting for over a year. The Lambics are just hitting one year. I haven't thought about storing the oak sticks once I'm done...

Well, I finally had a sample today (uncarbed) from some leftovers after racking the beer off. It's tart. I don't really know what else to say. Hopefully get it primed and bottled by the end of the month.

I bet the tart is just lacto off of the fruit. Give Mr Brett time and he will clean it up!

Got the raspberry bottled. It's tart as well. Not too hard to do at all with the wing capper. Pics to follow.
