Brewing a hoppy wheat! Cant get the GF over 209 degrees. Very slow rolling boil with 7.5 gallons!

Brewed a faux-pils with Krispy this afternoon. Going to see how quick of a turnaround on it I can go, possibly the weekend? We'll see!

I brewed a hoppy table saison on Monday that’s bubbling away happily. Pils/Vienna/Munich/wheat/rye and a touch of melanoidin. Hopped with Pekko, Lemondrop, and (cryo) Loral. Dry hop will be more of the last two. Omega Saisonstein’s Monster for yeast.

Was supposed to start at 1.043 but only got to 1.036. I won’t be that disappointed if it still tastes fine, but does anyone else have efficiency issues with the Viking malt, especially the Pilsner?

Yup, same efficiency issue with the Viking Pils. Never been a fan of that malt.

At least I'm not the only one. I've only got a little bit left from that bag. Maybe I'll sacrifice with flame to the brewgods in the hopes of an efficiency boon.

Brewing up a pseudo-lager with some Oslo Kveik from Bootleg Biology and Shoreline Pale Malt. Kind of in the ballpark of a German Helles Export/Dortmunder

Not the Oslo, but I did a similar sort of thing with the Krispy from Escarpment. Decent (and quick turnaround, had it grain to glass in 4 days), but I'm curious how/if it'll clean up at all over the next few days/weeks, not quite as clean as I had hoped. No off flavours, but certainly more yeast character than what would be to style were it with a traditional lagering schedule.

Ya interested to see how it goes as well. I’ll try and turn this around quickly but will defiantly give it some time to cold condition and even through some gelatin at it to drop out as much yeast as possible.

Will also play around with pH as I’ve noticed a definite acidic bite with Kveik, in particular Voss, in cleaner beers.

Where did you pick up the Bootleg Biology yeast Cam? I haven't tried them yet, but they have some interesting sounding stuff.

I grabbed some Oslo slurry from 2 Crows back in the April. At the time they also mentioned they had the Mad Fermentationist Blend as well from Bootleg. Other than that I know a homebrew shop out of Ontario (Short Finger) was the only place I found in Canada to have some of their strains, but currently looks like they are all sold out of their stuff at the moment.
