Today I'm trying a peculiar. Not only did my favorite pub change hands over the last few years, Granite's Halifax branch shut down, so a lot of this is definitely about nostalgia for me.

This is my recipe except Perle instead of Challenger, EKG instead of Styrian Goldings, and Lallemand ESB yeast. I'm still on the fence about adding a vial of clarity ferm when I pitch. https://beersmithrecipes.com/viewrecipe ... lier-clone

Making a Dark Mild with toasted oats and an open ferment in a vessel that is wider than it is tall.
On tap: Hopped Mead, ESB, Schwazbier
Coming up: Altbier
Fermenting: Maibock
Planned: NEIPA, NZ Pils, Oyster Stout

Brewing a centennial blonde. Trying to make a clone of Copper Bottom's Centennial Stock. I just freaken love that beer. They say its made with Canadian 2-row and just Centennial but I still haven't nailed it.
If anyone knows where I can buy this in the HRM area please let me know. I haven't find it off the Island.

American IPA (red/reddish? Used the last of a lot of bags) with escarpment labs simonaitis lithuanian farmhouse yeast. Pitched six hours ago at 80-85F with a small starter and chugging along just fine.

And it's done. 1.064 to 1.014 in 30 hours. I'll still need to dry hop it, and of course wait for an empty keg to put it in, but I've never seen a fermentation like that. I got a decent top crop off of it too.

tomorrow I'm doing an IPA. 5 gallon batch all grain single infusion.

12 lbs 2 row
1 lbs crystal 30.
US-05 yeast

I haven't decided on the hops yet, I'll probably bitter with galena and use centennial for aroma.
