Every bit of it. It had been sitting in the fridge, so I racked off any lite lager left on top of it and used the whole yeast cake. I try to get 2 brews out of every yeast pitch. Been doing it for 4 years and haven't had a bad batch yet. It's always a higher gravity brew that goes in top.wcturnedec wrote: ↑Fri Oct 13, 2023 2:25 pmNice! Re: What's everyone brewing?
Brewing a dry stout tomorrow-- using the recipe from Brewing Classic Styles as the base, but using 2 row with some munich instead of MO (it's what I have on-hand). Probably going to add a few ml of lactic acid when I rack to the fermenter to get the slightly lower pH lots of folks say Guinness has.
Anyone else brewed a Guinness clone or a dry stout similar to it? I'm especially curious if anyone has any insight on the water chemistry or acid additions (post-mash). I'm not going to let a can or 3 of Guinness get sour then add it to my mash, nor am I going to do the extra work of using acid malt or doing a sour mash, haha.

Re: What's everyone brewing?
I recently brewed a Guinness clone that has a very similar recipe to the dry stout in Brewing Classic Styles.Hibernaculum wrote:Brewing a dry stout tomorrow-- using the recipe from Brewing Classic Styles as the base, but using 2 row with some munich instead of MO (it's what I have on-hand). For the acid, I waited until just before bottling/kegging to add any, then used about 3ml of lactic acid to get what seemed like the Guinness ‘tang’. I preferred this way since you can add 1ml at a time and then taste it with the finished beer to make sure you don’t add too much.
For water, I went by the Dry Stout water profile on Brewfather. I think I’d like to try the water profile for Dublin next time I brew it, which looks to be a lot softer.
The beer turned out great. Not quite like a Guinness but similar. Using CO2 instead of nitro, makes it tough to get a perfect match.
Good luck with yours!
