Re: What's everyone brewing?
Brewing a dry stout tomorrow-- using the recipe from Brewing Classic Styles as the base, but using 2 row with some munich instead of MO (it's what I have on-hand). Probably going to add a few ml of lactic acid when I rack to the fermenter to get the slightly lower pH lots of folks say Guinness has.
Anyone else brewed a Guinness clone or a dry stout similar to it? I'm especially curious if anyone has any insight on the water chemistry or acid additions (post-mash). I'm not going to let a can or 3 of Guinness get sour then add it to my mash, nor am I going to do the extra work of using acid malt or doing a sour mash, haha.

Re: What's everyone brewing?
I recently brewed a Guinness clone that has a very similar recipe to the dry stout in Brewing Classic Styles.Hibernaculum wrote:Brewing a dry stout tomorrow-- using the recipe from Brewing Classic Styles as the base, but using 2 row with some munich instead of MO (it's what I have on-hand). For the acid, I waited until just before bottling/kegging to add any, then used about 3ml of lactic acid to get what seemed like the Guinness ‘tang’. I preferred this way since you can add 1ml at a time and then taste it with the finished beer to make sure you don’t add too much.
For water, I went by the Dry Stout water profile on Brewfather. I think I’d like to try the water profile for Dublin next time I brew it, which looks to be a lot softer.
The beer turned out great. Not quite like a Guinness but similar. Using CO2 instead of nitro, makes it tough to get a perfect match.
Good luck with yours!

Re: What's everyone brewing?
Believe it or not I’m getting back at it. Right now it’s just a “wet run” of fermentation and kegging/dispense with one of the wort bags from Noble Grape. A blonde ale that I’ll finish hop (tea) with some tettnanger just so it’s not any one style. But soon I hope to be feeding my hand pump with a basic bitter. While learning how to use this grainfather thingy I now have.

I sincerely suggest taking Brew School over at Brew HQ. You learn to use the Grainfather by brewing on one and get a lot of great insight on brewing in general, which you may not need, but it's also nice just to talk shop while you're brewing too. Plus you get to drink beer, play pinball, and take home your wort!
I tried brewing with my Brewzilla before taking the course and couldn't quite figure it out. They explained it so clearly and made it really simple to understand.

Re: What's everyone brewing?
I've been around a few of them when in use, and about 200 commercial breweries of various sizes.
Plus YouTube isn't bad. It's just a bit of a painful trip to Burnside from here. The Home Hardware up the road has everything I would ever want for moving water, wort and beer around.
I'm still getting the rest of my process straightened out in a new house. Some of my old gear is useful, some probably not any more, with the grainfather now in possession. (Phils Phalse Bottom, Hand made wort chiller, two pots that don't heat up on my Indiction cookers....)
Just tapped a British style ale, dry hopped, to feed my beer engine. Real Ale on tap, although it started out life as an Arcade Blonde Ale wort bag.
My latest brewing intiative is basically "Feed My Handpump!"

Did you malt it yourself? Where to buy this, and maybe Kamut?

Seeing as I’ve been brewing from grain for 20 years and around breweries as well it’s not that difficult.
I have already seen some things to improve. Hate how they show someone sprinkling a packet of dried yeast on to warm wort. Plus I’ve used a “fly mash” technique forever. They basically do as well but get caught up in keeping it a shallow depth over top of the grain bed. That doesn’t matter as long as it’s not exposed to air.
