I just did a version of 2crows' Bedlam Bridge DIPA, but I scaled it back to the pale ale range. Currently fermenting and making my basement smell like 5 alive

Gonna use up some Munich Malt. Just mashing in on a munich dunkel. Munich, Pils, Melanoidin, Carafa 3. Saaz hops and Diamond Lager yeast. Also gonna be no chill, picked up a hot wort bag from brew hq to give it a go.

Recipe is as follows:
3.3kg Pils
800g Munich
400g Aromatic
200g CaraMunich
70g Carafa

2oz Hallertau@60
1/2oz Hallertau@15

O.G. 1.054

I'm using a Kolsch yeast this time around. I've done it in the past with Alt yeast and with S23. Surprising how different they were. Wouldn't recommend the S23

Testing out a smaller BIAB system with a DIPA. One of hopefully a few test batches to hopefully find something decent to submit to the Big Spruce event. The $50 costco induction burner heats 10L very slowly to a boil... hopefully it will make it.

Tomorrow is day 1 for a cherry sour! Very simple mash of 2 row, Calypso hops in the whirlpool and a bunch of cherry juice at the end of primary.
