Re: What's everyone brewing?
Brewed a Hopfenweisse yesterday and we badly missed our target OG (luckily had a kilo of wheat DME on hand to bump it up).
The only thing I can think of is that we were having a hard time with the grain mill at NG. The 2 row looked fine, but the crush on the wheat malt didn't look great. Do you guys mill your wheat malt on a tighter setting? This is the first AG beer we've brewed with any large portion of wheat...

Just pitched some Wyeast 3724 into a saison. Word on the street is not to use an airlock with this strain?

Had to clean up a moderate yeast explosion this morning. This strain seems to be aggressive, and it was only 18C.

I brewed a 644 galena pale ale as an experiment this weekend. Already smells like tropical fruit which is obviously pretty great coming from galena.

Brewed my first kick at an Oktoberfest during the storm on Monday. I mashed in the morning when it was -8. That was a lot of fun.

Re: What's everyone brewing?
I finally got enough gear together to brew some beer after selling all of my gear in Halifax and moving here to Winnipeg in August. I ended up deciding on a 5-gallon kettle that I built an insulating coat for out of reflectix. Perfect for doing 12L all-grain BIAB batches on the stovetop (nice to be inside when it is -30 outside). Really happy with all of my new equipment, including the Custom BIAB from MashedIn - thanks Becky!
The biggest challenge with my new apartment was adapting a faucet to vinyl tubing for wort chilling. There is no hose faucet here and the kitchen faucet is one of those showerhead style ones that pulls out - very useful for rinsing things but I couldn't find any way to attach a hose adapter to it. I ended up getting 30ft of tubing to run the chiller from the bathroom faucet to the stovetop!
I brewed a saison today with some new German hops varietals - Hull Melon and Hallertau Blanc. Trying the dry Belle Saison yeast for the first time mainly because I didn't feel like making a starter. Looking forward to having some homebrew back in stock!

Re: What's everyone brewing?
Just kegged my first beers since mid October. Hoppily Ever After dipa has returned. Massive stone fruit character to this beer in flavor and aroma. Pine and lemon notes on the finish. Can't wait til it is carbonated. Followed by Flat 6 - Chocolate Milk Stout. 6% abv. Big rich chocolate nose with coffee notes. Taste follows through with a big sweet creamy chocolate character.

Re: What's everyone brewing?
Brewed my first lager yesterday. Very simple SmaSH Pils with 34/70. I've converted my bath tub into a temporary swamp cooler and fermentation is off to a good start. Planning a big chocolate milk stout that will get split into two fermenters, one with peppermint and one with strawberries and a hefe yeast

Re: What's everyone brewing?
Nicely done Lucas. I run a hose across my basement to my brewroom for the same reason.
Brewed a DIPA 1.072 with 19% oat malt. That stuff is pretty neat to brew with. super large husks but you have to narrow the gap on your mill a lot. So far the hops are 75g motueka, 75 pacifica and 50 citra. I might add some cascade to the mix when I do the dryhops.

Re: What's everyone brewing?
Finally had time to brew again! Brewed an IPA for the Trailway competition and came in right at the 1.070 gravity limit. Hopped with Citra, Amarillo and centennial. Yeast is Omega DIPA. First time using it.

Re: What's everyone brewing?
Brewed for the first time since February last Friday, made an IPA with Belma hops. 3oz at flameout and another 5oz for a 30-min stand at around 180F. Tweaked my sparging technique and overshot my efficiency (by quite a bit).
First time using liquid yeast. Wyeast 1332 (Northwest Ale). Even though I had cold crashed it the night before I had activity within 12 hours and it went off like a bomb after that. Highest krausen I've had so far! Going to dry-hop with more Belma. Really looking forward to this one!

Re: What's everyone brewing?
Brewed up a Brew Canada Draught kit with a mash of 4 lbs. 2 row and 8 ozs. of Vienna malt. I only got 4 gallons total ( 2 gallons each ) because of my 2 3 gallon pots on my stove. Added 28 grams of Hallertauer to hopefully get some hops into this. This is an experiment just for the hell of it and I have no idea how it will turn out. Wort tasted good though. I thought this would taste better than adding 1 kg. of corn sugar. O.G. was 1.048.

Hey, I just made an altbier yesterday. Pils, dark Munich, aromatic, melanoiden, caramunich and and carafa, with spalt and US05. More complicated than it needed to be, but I was trying to use up some grain.
