Re: What's everyone brewing?
Look what we scored. 1.5 kg of hops from a friend's garden, grown from rhizomes his father brought up from Pictou County. Naturally, we have no idea what variety they are, so we are assuming Cascade. Planning to brew a bit of a mystery IPA tomorrow. Wish us luck!

Going to brew two batches tonight. A 5 gallon Octoberfest and a 5 gallon Pilsner that I will be dry hopping with Citra. The Pilsner that is dry hopped with Citra is a beer that I will always have on tap.
Take care, Bluefin.

Re: What's everyone brewing?
Are you doing that in one mash? Or 2 separate batches? I'd be interested to see if it could be done with steeping some speciality grains and adding to half and what hops to use.Bluefin 774 wrote:Going to brew two batches tonight. Re: What's everyone brewing?
Had my first brewday yesterday since a January brew for Garrison's experimental IPA competition
Brewed something of a boozy pale ale with horton ridge malt (they have it at Noble Grape) and 18oz of fresh hops harvested during the mash. Galena, Chinook, Centennial, Cascade and Mt Hood throughout the last 30 minutes/whirlpool and planning to dry hop with the rest of the fresh centennial and cascade.
I'm really excited to see how it turns out, it's the first batch I've done where I hit my OG on the nail (1064) and got full volume (10gal). I'm trying a controlled temp fermentation using corny kegs as fermenters in my danby kegerator setup.
It's re-ignited my interest in brewing since I didn't spend half the day swearing profusely and messing things up!

Re: What's everyone brewing?
brewing my first attempt for the big spruce experimental sour category today. Will have to try take two on the dark mild next (first brewday had a chiller malfunction leading to watered down wort, so that beer was "salvaged" maybe into something more like jester king's commercial suicide by adding some sugar and a mixed culture - obviously not suitable to enter as my dark mild anymore though)

Re: What's everyone brewing?
Brewed my exchange beer yesterday. With a season typically filled with heavy hitters, I opted for a lighter-fare Kolsch. The recipe is different enough from what I've done in the past that I hope I haven't messed it up.

Re: What's everyone brewing?
Hey everyone,
After a (what I thought) successful brew day a few weeks ago, my beer turned out a great colour, but the whole fresh hops added almost zero bitterness. I've got 10 gallons of very sweet tasting amber ale instead of IPA, though the gravity is only 1010.
Here's the recipe for a 10gallon, any recommendations for next brew?
Recipe: Harvest Ale Rnd 2 TYPE: All Grain
Style: American IPA
Amt Name Type # %/IBU
10.00 gal Halifax Water Water 1 -
8.00 g Calcium Chloride (Mash 60.0 mins) Water Agent 2 -
8.00 g Gypsum (Calcium Sulfate) (Mash 60.0 mins Water Agent 3 -
Amt Name Type # %/IBU
20 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 4 82.8 %
2 lbs Caramel/Crystal Malt - 60L (60.0 SRM) Grain 5 8.3 %
1 lbs Cara-Pils/Dextrine (2.0 SRM) Grain 6 4.1 %
1 lbs Melanoiden Malt (20.0 SRM) Grain 7 4.1 %
2.4 oz Acid Malt (3.0 SRM) Grain 8 0.6 %
1.00 oz Glacier [5.60 %] - Boil 60.0 min Hop 9 9.2 IBUs
0.60 oz Galena [12.50 %] - Boil 30.0 min Hop 10 9.5 IBUs
1.10 oz Chinook [13.00 %] - Boil 15.0 min Hop 11 11.7 IBUs
1.00 oz Centennial [10.00 %] - Boil 15.0 min Hop 12 8.2 IBUs
0.80 oz Mt. Hood [6.00 %] - Boil 15.0 min Hop 13 3.9 IBUs
0.05 oz Cascade [5.50 %] - Boil 5.0 min Hop 14 0.1 IBUs
Amt Name Type # %/IBU
0.70 oz Centennial [10.00 %] - Steep/Whirlpool Hop 15 2.9 IBUs
USed 4x ratio for wet hops
Additions at 60, 30(Galena), 15, 5, Whirlpool for 10 mins
