Re: What's everyone brewing?
I got a Father's Day Brewday in yesterday. Decided to try a rework on the recipe for my Stillwell Open beer, making it a red rye IPA instead of a double. Did a protein rest to account for the 20% rye and then had some issues with temperature on the second infusion: Thermapen said I was dead on (although obviously in the top 3-4 inches) while the thermometer on the tun said I was 10°C shy at first, rising to 2°C shy by the end. So I have no idea what my actual conversion temperature was. Gravity ended up pretty much dead-on though. Pitched a nice starter of American Ale II/California V on it at 10:30 last night and by this morning had a krausen almost formed. That yeast should be somewhat forgiving body-wise if my mash temp was in fact a little low.

Re: What's everyone brewing?
Going to keg a kolsch very shortly, then I'll have a free ferm chamber staring at me until I decide what to make.
At this point my foot is healed enough that I will probably only need minimal assistance. I've also gotten pretty good at sliding chairs around to move heavy things.

Brewing up a table saison/grisette this evening. Looking for a 3.5 % ABV and ~20IBU summer beer. Pilsner malt, munich and torrified wheat. Perle and Saaz for the hops. Using the same yeast blend of French Saison 3711 and Farmhouse Ale 3726 with which I fermented my Stillwell Open brew.

Boiling a simple MO/cascade smash APA
13 pounds MO
4.5g gypsum and 2.5g CaCl for water
4 oz of cascade at 15 min
No 60 min addition
Will dry hop with another 4 oz or so of cascade after a week.

The intergalactic APA is chilling. Single hop. Well blend. Using the new Zealand orbitz hops finally. 2 lbs hops in the last 10 min and will be dry hopping with 1 lb for 5 days.

Re: What's everyone brewing?
Brewed up a Kolsch this morning and may do an IPA after supper
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Re: What's everyone brewing?
Brewed a wit last weekend, took a crack at Keith's muddy river brown on Tuesday, and I did an APA today... I only have three kegs to put it in... So that should do me for awhile, there's a hint of sadness to that though haha.

Re: What's everyone brewing?
Mashed 32 lbs for a 1.070 10 gallon weizen on saturday. Split it three ways and diluted by 33% down to 1.050. One on dry S-06, other two on a split 3L 3068 starter. While boiling on saturday decided to do another sparge and gathered another light 20L. Decided to experiment and purged it with CO2 and dropped in a lb mesh bag of 2-row to sour. It was down to 3.6 PH by sunday afternoon. Boiled, hopped, added some extract, chilled and dumped in some krausen harvested 3068 yeast from the extremely active batches pitched on saturday. One mash, 4 batches vigorously fermenting away. I'm curious how the sour will be. It smelled awesome before boil, almost tropical fruit-like. Bring on summer!
Kegged: El Dorado IPA, Rocketfuel 2.0, Wet Hopped Pale, Ryrish Red, Marzen, BN Exchange Dunkel, BN Exchange NEIPA, Lies Lies Lies - Citra <0.5% ale
Fermenting: NZ Pilsner with Enigma, Strawberry brett cider

Will be brewing for the first time in about 10 months this coming Monday. Top of the list is 15 gallons of Citra SMaSH, hopefully followed by 15 gallons of Azacca Saison.

Re: What's everyone brewing?
My lease ended today. I didn't want to move a full carboy so I finished bottling my last batch (for a friend's wedding at the beginning of August) 3 hours before my final inspection with the superintendent.
I'm around Halifax until the middle of July and I'll be back for a week at the beginning of August - would love to meet up with folks for a beer or two before I leave. The first half of July is looking relatively free of obligations.
