Brewing up a very simple saison with a hoppy twist. Thinking Pacific Jade. This'll be our 2nd AG batch on borrowed equipment (thanks sheanhiggins!

Have people had good experiences with the Belle Saison dry yeast? We did one batch last year with it and it was very underwhelming. I was thinking of using WYeast 3724 but I've heard it can be bad for stalling. I'd like to try 3711 instead but doubt I'll be able to get my hands on any before the brew day.

Despite what I had read on Wyeast 3724 it stalled on me without an airlock (just foil covering the top of the carboy). Started at 19C and ramped it up to 30C over several days. Started at 1.043 and only fell to 1.023 after 2 or 3 weeks with no real visible activity at the end.
Removed the heater wrap yesterday morning as I was planning to add some 3711 but wanted to start it at a lower temperature. Oddly enough, the drop in temperature has got things going again without having to add the 3711. This is my first time fermenting with 3724 and now I understand why people call this yeast "finicky".
Might still pitch the 3711 for insurance.

I've used the Belle saison a few times with good results. It's more forgiving then some of the other strains, but it doesn't have quite as much character.

I need to get my hands on a packet of 3711. I like the description of it and it seems like just the ticket for someone who doesn't want to take 14 gravity readings of their beer/doesn't own a heater wrap.

Currently chilling the wort. Right now wort coming out of the counterflow chiller at 40c full tilt. Taking no time to drop. Hoping to be finished this spontaneous brew day in the next 45.

Last night I put on a Pilsner that I will dry hop with Citra. I had to pour out a 5 gallon batch of Irish Red Ale last night. It was very slow to start fermenting and it never did get going well. It was very cloudy and had a lot of stuff floating in it. It was not looking great so I ditched it.

Made a lawnmower beer today as a first run on the 10 gal SS Mashtun (and also the digital refractometer and the foot pedal switch for the pump). I needed a swiller for hot days later in the summer and wanted my first batch on new gear to be something I wouldn't be too disappointed if I messed up. The recipe is Fizzy Yellow Beer from HBT; it's basically a Blonde Ale (70/30% Vienna/BoPils). Last time I made it I used the called-for Perle + Tettnanger combo, but I'm pretty much out of Tett so I used a bunch of Hallertauer instead. Nothing fancy, but it's crisp, tasty, and you can feed it to anyone.
I hit most of my numbers pretty close. Digital refractometer and hydrometer disagree on my SG, depending on what conversion you use. Hydro said 1.052@25°C which corrects to 1.054. Digital refractometer said 12.4 Brix which is anywhere from 1.049 to 1.051 depending on who's doing the conversion. Estimated OG was 1.051 so I'm definitely in the ballpark.
I'm pretty happy with the SS Tun. I would like to have litre markings like the 20 gal does, but that's a small thing. It's also quite a bit heavier than a cooler, but I'll be able to adapt my gear and layout to suit. The thermowell thermometer reported slightly more than a degree Celsius less than my Thermapen inserted directly into the mash, but as long as that's consistent it's easy to work with. Vorlaufing again after being spoiled by BIAC for over a year was a bit annoying, but I'll get good at it again. There was a lot of grist get through the false bottom; I don't know whether I need to adjust my crush (0.9mm/0.035") or what, but I expect it would probably help a little. Overall it was a good brewday and I'm pleased with my investment.

Just kegged my first all-grain brew: 2-Row and Citra SMaSH with 240g of hops. So tasty I could have drunk it flat - can't wait until it's carbonated and ready to go!! A definite make again.

I definitely want to give this a go soon. I made the Jacked up APA Grainfather recipe as my first one, I did a 14hr simmer though, I kegged it late last week and it turned out great for my first AG brew.

Brewed up a California Common on the weekend. First time with this style. Fermentation started quick and Keezer is keeping it pretty steady at 61. After two recent spoiled batches from bad yeast hoping this new WL810 yeast is the cure.

Eric and rod are brewing 20gal of an American lager for me this weekend.
I'm out of commission for a few months. Tore my bicep tendon completely off last week. Had surgery last Tuesday.
My brothers will take care of my brewing needs for a while. I came up with the recipe...but they got my grains. ..will get my water...and lift/carry everything for me. I just get to watch on brewday

It said "a tart eisbock"... If I freeze distilled a sour it would make it even more sour right? Might be worth trying with a gallon or so of berliner weisse...
