Finally getting my Oktoberfest brewed tomorrow, pending weather. Wanted to get it into the chamber earlier in the summer but should still get a good 5-6 weeks of lagering time.

Grain weighed. If weather is nice I'll be knocking out 20 gal of nut brown. Or a half batch for what this new rig can handle.

30 mins into a 60 min boil for my Rye IPA. Aiming for 70 ibu's and a shit ton of hops at flameout! Going to dry hop with 7 oz for a 10 g batch. All hops were Columbus, Galena, Amarillo and Citra.

Thanks guys and will do. I had some Rye malt to use up so I designed it with 2 row, C60l, Rye and a few oz's of Chocolate. I was going to do 2 oz FWH but it didn't look like enough hops so I added 3. lol Hit 1.063 OG.

Brewing up a tried and true blonde recipe (BCS, actually) tomorrow, but I'm gonna mess with it and add just a little touch of chocolate malt, just to see what happens.

We're brewing up an APA today, inspired by Night Shift Whirlpool. Only 6 IBUs in the boil, the rest of the hops (better part of 600g in 40litres) during the whirlpool and dry hopping.
Curious pH issues, see my other post for more details and warning.

I really enjoyed that beer when I had it in the states let me know how it turns out might need to rob the recipe if it's a good clone.

I was considering the exact same SMaSH after having Bad Apple's Mosaic IPA, updates please.
Well, it seemed like the fermentation was all fucked up. Slow to start, didn't really do much, seemed unfinished, tasted uber sweet (cloying, maybe?). I could have just pitched some new/different yeast and let it go, but I didn't want to lose any time trying to fix a beer that might be hosed, so I bottled it up and just let it go.

Just cracked one, just to see if I'm dumping or drinking. Surprisingly, it seems to have resolved itself. The sickening sweetness is gone and it's actually drinkable.

The Maris Otter is nice, but the way I did the 100% Mosaic... well... I think it's too much. I find it a potent hop (strong flavour) and the amount I used (0.25oz @ 60, 0.25 @ 15, 0.25 @ 5) seems, at least in my mind, to have been too much.

I would definitely try this again, but with a different yeast (I used WLP017 this time - I might use Nottingham next time) and perhaps a shade fewer hops at 15 and 5 mins.

My mosaic smash (10gal) uses .5oz at 60. .5oz at 15min. .6oz at 10min. .7oz at 5min. .8oz at flameout. And I dry hop with 2.45oz in each carboy for 5 days. Ibu is about 25. I use 2row pale malt..or superior pale malt as the base. Mash at 148f

I just did a small batch - 2.5 gal. My additions amounted to about 40 IBU. And, unfortunately, I mashed at 154 instead of 150. Like I said, I'm definitely to try this again - made too many mistakes the first time around. :)

I think simcoe and mosaic are my favorite hops right now...both will be hard to find for future brewing

I've since had a couple more. It's still an intense hop, but I'm liking it more and more. I think I was just overwhelmed on the first one. A little drier would be nice, but the mouthfeel is good. I AM SATISFIED.

Hoping to brew 15 gallons of Saison early next week while on vacation. May try to do a double brew day now that I've got a second propane burner. Likely an APA or IPA for the second batch. Need to get something back on tap!

Brewed my usual IPA, but tried using city water instead of RO for the first time.
