Got fed up with the mill falling over due to the weight of the drill. So I created Binder. Worked like a charm and is holding the smoked Porter in his gut. Easy to use and completely eliminated dust from grinding.

Brewed up an "American" porter (bjcp 2015) today. Brown porter in the 2008 guide. It has English hops and yeast so I don't get this "American" bullshit! Image

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Mashed in on the smoked Porter. Picked up a cheap thermometer and we'll it's not accurate vs the brew pot temp. Running blind on the mash for my smoked Porter. Image

Brewed a 5 gal batch of IPA this afternoon, my hop schedule is below......hoping for a "hop burst" with the late additions that I read about in a recent BYO article:

20 mins = 1oz each of Simcoe and Amarillo
10 mins = 1oz each of Simcoe and Amarillo
2 mins = 1oz each of Simcoe and Amarillo

With these late additions, should I bother with an additional dry hop?

Definitely dry hop an IPA. As for late additions, I typically do a 10 min and rest at flame out. Followed by a large dry hop

23ltres of APA. 40ibu 1.049 OG
~70/30 pale ale/Vienna with some honey malt and carabrown thrown in for a touch of sweet to bring out the tropical in the 80gr of NZ orbit I put into the whirlpool. <85c for 20 mins. I'll figure out dry hopping once I taste the beer. If the orbit isn't good I will drown the beer in citra.

Anyone else brew with their NZ Orbit yet?
