Just mashed in on 12 gallons of Burton bitter. Smells so good....is it too early for a beer?

I do a lot of my kegging between 6 and 7am - sampling at that time of day always seems odd, but it's never stopped me!

Just cleaned Stanley and installed a couple kegs. Had to sample the new beers for quality control. Only 2-3oz to ensure it was fit to share... Needless to say needs a tad bit more carbonation.

Getting my SMaSH Exchange Golden Promise + EKG ESB done today. Trading the simplicity of the ingredients for some complexity in technique. A portion of the malt was toasted for flavor and I've got some of the runnings caramelizing along with and extended boil for color.

Washing kegs... Well watching them wash. By far my best investment to date.

Making a rescue beer for an Oktoberfest that finished too sweet. Mashing at 64.5c and using sugar for some of the gravity points. Hoping that the new beer will be dry enough that I can blend it somewhere between 1:1 and 2:1 to get the Oktoberfest down to 1.010. Whatever is left over gets clausenii tossed in it for two months.

Although I was going to do some experimenting, I decided that I needed to fill a keg with a known good beer, so I'm brewing up Dave's IPA. I'm going to start trying different things next go 'round.

It was originally planned to be a Cream of 3 crops cream ale, but when getting grains ready yesterday I found mold in my flaked corn....

So it got switched to a simple Blonde Ale, 18 IBUs with Galena and Citra significantly under hopped for most of you, but it will be my session for the start of summer. First time brewing with a new burner and had a much lower boil off rate than expected, but I also overshot my OG, so I ended up with an extra half a gallon in the fermentor at the expected OG.

Also my first time ever using Fermcap, I can't believe how well that stuff works. I only had a few inches of clearance at the top of the kettle so I was standing by nervously with my spray bottle. And there was nothing that even resembled a potential boilover.

I just brewed my SMaSH beer for the exchange, maris otter and rakau. Regular APA, around 5.2% and 42 IBUs.
