I made a DIPA yesterday with roughly the same. I also added citra and centennial. My krauzen looks like the slime from You Can't Do That on Television. Are you going to dry hop yours? I'm using columbus for the bittering and then finishing with each variety. The simcoe last night smelled amazing and the calypso is underway. This is my first experiment like this so I'm looking forward to the results.
The Amarillo brew tasted the best, the Simcoe smelled the best, and the calypso was really nice but mellow compared to the other two. All my personal preference of course. Next batch will be a mix of all three.
Am I correct to think that 10 and 5 minute additions add mostly taste and some aroma while the flameout and dry additions are mainly aroma?

I'll be curious to hear whether your attenuation is affected by the extended mash. Many of my last several batches have overattenuated to the tune of 4-8 points. Some of that can be explained by occasionally missing mash temperatures on the low side, but I also began to wonder whether letting my first runnings sit in a bucket while I sparged (15-20 minutes, usually) was causing additional conversion. The thing is, I don't vorlauf anymore because I've got a bag for my tun so I just open my valve and let 'er rip. Could be that there's enough cooling happen during vorlauf that temps might slip down out of conversion range. The overattentuation definitely happened once when I was still doing a vorlauf, but has been more pronounced since I switched to the bag. I've done the same combination previously in an IPA and dry hopped with citra and Simcoe. Worked for me.

Kegging a Kolsch tonight and harvesting the yeast for another batch. It's out on the back deck to chill down overnight with some gelatin.

So worth it. Cleaned 9 kegs today and all I had to do was change out the posts and run it for 15 mins. Then do a 2min rinse cycle. Then a quick starsan cycle. I've got my next 4 kegs ready to go.

I was pretty lax about these batches, so who knows how they will turn out.
