Ouch!

Threads like this were enough for me to make the switch to plastic better bottles.

Brewing a Pilsner with NZ hops as the showcase Nelson Sauvin and a little bit of Topaz
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Bottled a blond singel (going to call it "Put a Ring On It") and a quad yesterday. Made some starters for a tripel and an all-brett ale today. All in all a productive weekend. 8-)
Enjoying: Black Sheep (Dark Farmhouse with Brett)
Fermenting: NZ Pale Ale, Orval Clone, Berliner Weisse, Brett APA
Planning: Old Rasputin Clone

I'm making a golden sour with leftover yeast from my roselair primary cake, some bugs from a previous lambic and some wild yeast and bugs that I got from a kitchen spontaneous fermentation. I'm going all in on this one.

Sounds great, the kitchen spontaneous fermentation sounds very interesting. What's the story there?

I just made an all extract lambic, 50/50 pilsner/wheat extract + 4 oz of maltodextrin. Pitching the melange bug blend from the yeast bay.

Fermenting: Oud bruin/Vienna Pekko SMaSH
On tap: Nelson dry hopped Berliner/ Scottish Heavy 70-/ NE IPA

I got the kitchen spontaneous bugs from my hydrometer jar. A while ago I left some wort in there for a few days and noticed it started fermenting. I figured I might be able to get something interesting from it so I pitched the left over sediment from that into a mason jar with some fresh wort. I did this a few times and eventually it took off really fast (smelled ok, but a bit off). It kept on smelling and fermenting better the more I did this. About a week ago I let it ferment out then closed the jar to save it and pitched it for this lambic. I didn't measure the gravity of the beer in the mason jar so I don't know how alcohol tolerant or what kind of attenuation this stuff has, but I plan to run some more experiments with it in the future.

Interesting, might give that a try in my basement where I ferment my sours and keep my grain.

One other thug I forgot to mention with my golden sour, while cooling the wort I left it uncovered for about 1.5 hours. About 18 hours since pitching, it already has a nice Krausen.

I'll be making an EKG SMaSH IPA with superior pale and US-05 this weekend! I might grab a sixer of the Garrison for comparison :)

possibly a mini mash pale ale, second retry of my pale ale I've been trying to recreate.

Original was a one off that developed a huge kombucha style mushroom looking growth attaching itself to the hop bag in the secondary...I lost all hope but my instincts told me to bottle it and it ended up being my best ever homebrewed beer.

What I do with the imperial stout depends on my beer thief sample... :)

Brown
