Just relax and let it sit for 2-3 weeks, when you have time to bottle, rack to a bottling bucket, add priming sugar and bottle.

....The Festa instructions and NG instructions for Festa are really good... for lighting the stove with.

:stupid: You'll get much better product if you keep the yeast happy and let them do their thing over 3 weeks. Cold crash or use glycerin (though, I've never tried it) if you're worried about sediment.

Hey, I have a question that seems to fit into this thread. I've just started a FestaBrew batch, and would like to do a single stage fermentation. This is my first time brewing. I snapped the lid tight and put an airlock on last night when I started it. Should I have the lid loose for a few days, and then snap it tight?

Also, there wasn't lots of space between the top of the liquid and the top of the bucket (maybe 4", enough for a few more litres). Am I going to run into problems with not enough space for krausen?

Also, should 2 weeks be enough fermenting time (before bottling)?

IF IT'S A STANDARD BUCKET FOR HOMEBREWING THEN YOU'LL BE FINE. I'VE NEVER HaD A FESTA BREW KIT NEED A TONNE OF SPACE.

Hey jtmwhyte, thanks for the reply. It is a standard homebrewing bucket from Noble Grape, so sounds like I'll be fine.
