Yeah - I already have the spot picked for the indoor electric brewery - just need to wait a couple years for it to happen. In the meantime, outdoor propane brewing isn't so bad!

I just upgraded from an indoor electric stove too setup and must say the outdoor gas is the cats meow.

What's everyone making this weekend?

Finally doing the Off-Kilter 80/-. Going to need to start my starter sooner than the day before next time; it's barely showing bubbles after 24 hours.

Just brought 1 g of first runnings to a boil in the kitchen to caramelize. Smells awesome already.

Edit: :eek: this may not go well. Need to suck it up and buy some fermcap… :D

Weather cancelled my plans to brew the stone levitation clone. Maybe sneak out early one day this week.

I just made a southern english brown ale. My last one only scored a 27 at ALES, and I can't let that stand.

I was thinking of brewing a Simcoe Pale Ale

how does this sound?

10gal batch

Malt
16lbs 2 row
4lbs Vienna
1lbs crystal 15

hops
Simcoe
bitter to about 40-45 ibu
1oz at 15min
1oz at 10min
1oz at 5min
1oz at flameout.
maybe an oz or 2 dry hop???

I haven't had a chance to run this through beersmith yet, so some adjustments will be needed to keep the ibu in that range.

You might already be aware, but this is almost the exact malt bill (slight difference of Crystal 10L vs 15L and doubled for a 10 g batch) as Ed Wort's Bee Cave Haus Pale Ale. It is a highly-regarded recipe on the HBT forums where it was originally posted. Obviously you'd be doing an all-Simcoe instead of an all-Cascade hop bill, and it looks like you'd be hopping it up quite a bit.

I made that recipe a couple of months back using US-05 instead of Nottingham yeast. It fermented super-dry (1.006 if I remember right). I like it well enough, but I've given it to a few people who really loved it. It's quite crisp but still definitely an ale. I wonder whether you might want to dial back your late additions a little just because although it does have some malt backbone that much Simcoe might overpower it.

lol...I got the malt bill from hbt...but it was for a wit style with orange peels...he must have took the idea from that guy lol. ..
homebrewers are a bunch of thieves

I dont think I ever brewed with simcoe...so I wasnt how much to use...I wanted a hoppy apa with with with a smooth lite bitterness. ..like ipa hoppy without the high abv %...

If you've got some time to experiment I'd recommend trying the original recipe and modifying it from there. I don't keg, but if you do I'm guessing that one could go from grain to glass in a little over a week. It does fit the description of what you're looking for: it's almost a lawnmower beer but not nearly as light as most beers that carry that tag. And I wouldn't say it's quite IPA hoppy, but it's definitely getting there.

I was thinking of a very hoppy apa...smash apa's are a favorite of mine...my Eldorado smash used 5oz (for a 5gal batch) including dry hopping and was awesome...and my citra hop had a bunch of late hops.

I feel I have been "Fearing the hop" with some of my apa and ipa.

should I expect anything weird with using this much hop?

it will probably be around 4.5oz in total once im done...doesnt sound like alot for 10gal...but like I said ive never brewed with this hop...

4.5oz in a 10g batch isn't much at all. I just used 4.5oz in my 10g batch of pineapple pale ale that was calculated to 35 IBU.

The big thing is your timing. 4.5oz added at the beginning of the boil is going to really bitter. If you add .5oz at the beginning and the rest at flameout it won't be that bitter but will have lots of aroma.

If it was me, wanting to brew a hoppy apa, I'd up the hops. Do your initial bittering addition to whatever bitterness you are looking for, then hammer it with flameout hops.

Not necessarily all at flameout, but last 10 min with a good amount at flameout.

The bcs APA that I brewed last weekend had 5.3oz for ~11gal. 1.3 at 60, 2oz each at 10 and 0. Calculated was mid 30s as well - dunno how it will taste, we'll see in another week or two!

I noticed that you were doing 10 g to comment about the doubled malt bill and then totally forgot when I was thinking about the hops. If you keep the IBU's to the originally scheduled 40ish, you can probably hit it even harder than that with later additions.

For the record, lots of people have tried that recipe with lots of different hops, at least a couple with Simcoe:

Brewtoad 5 g Simcoe version

Brewology 101 5 g Simcoe version

HBT comment from a guy ranking various hops he's used (although I think he bitters with Magnum for consistency)

The original thread on HBT for that recipe is 3000 posts long and there's another thread where folks have been reporting how much they've made (including variations); they're up pretty close to 5000 gallons since 2007. It's probably an excellent recipe to get to know some hops with!

I'd FWH the bittering addition for extra flavour and do lots of late as well. I prefer last few minutes to flameout.

I bumped the total hops up to 6.5oz...I normally fwh...I probably will with this brew as well

update...

brewed this afternoon.

.7oz fwh
1oz 15min
1oz 10min
1oz 5min
1.8oz flameout
will dry hop 1oz for each carboy (3-5 days)

only 5gals tho...running out of buckets, carboys, kegs, and wifes' patience.

This will be gallon number 30...in a week
