I just kegged my dry hopped IPA. It's one week since brewed and beautiful already. Huge aroma and fruity flavours from the Amarillo and Galaxy. Tomorrow I'm making an APA with a hop stand and no dry hops.

Mashed in an hour ago on my first solo brew. APA kit from Everwood.

Since my first batch is now ready at least when the appropriate time comes I can legitimately relax and have a homebrew.

Wee Heavy. Representing my heritage through yeast selection this month. Used Irish Ale 1084 in my red ale (not a traditional Irish Red mind you). Have the Scottish Ale 1728 for this and grabbed another French Saison 3711 to try to further hone in on that style of beer.

Yeah, so that moment came. And I did relax and have a homebrew. No cussin' or nuthin'. I learned a lot today. More than I wanted to, maybe.

Today's first lesson, if we're only counting lessons I hadn't already learned (otherwise "make sure your valves are closed" would have led the parade), can probably best be phrased
"Know your equipment; that goes double if you're using equipment for the first time."
Long story short: I ended up with way more wort than I should have due to an assumption that the "gallons" labeled on the side of a new-to-me bucket meant "US gallons" as opposed to "Imperial gallons". I sparged with close to a (US) gallon too much water. And then because what came out didn't seem to be "enough" I worked almost all that water back out of the tun with tilting and such.

8+ (US) gallons at 1.040. Should have been 7 (US) gallons at 1.050. Filled my 9 gallon pot as high as I could bear, but in the end I tossed some wort I could have used if I'd been thinking a little more clearly (could have boiled it down a little inside on the stove). Figured I might be able to get some points back by extra boiling so I that's what I did. Of course there was a boil over (yay, first boil over!), but it was fairly minor (mostly just enough to make cleaning the kettle afterwards a little more...fun). Checked my gravity after an hour and it was up to about 1.046ish. The day was already overlong by that point so I just had to start my boil timer there and toss in my 60 minute hops.

Ended up with 5.25 (US) gallons of wort at 1.050 or so. Evaporation rate started increasing as the temperature dropped, of course.

120-minute American Fail Ale. We'll see how it turns out. Should be a little extra hoppy due to the lower volume, but a little "light" in terms of ABV. If it's awesome it'll be tough trying to recreate it. But whatever, it'll be beer. Wheeeeeeeeeeeeeeeeeeeee!!

good news...most of my mistakes made on my first batch, were never made again...live and learn

most mistakes in brewing result in beer...wish the rest of life were like that

French Saison is the 4th beer of FeBREWary. Hopefully finding time to get a coffee pale ale brewed tomorrow for beer 5.

I'm going to be planning out a few brews. I have 3 kegs that need to be filled and I know a 4th will be empty in no time. Waiting for the Perlicks 630's to arrive as well. March will be a busy brew month. Mike I'll let you know when I'm brewing.

Will likely brew a double batch this weekend, my go to beer for the masses (good beer for people who like bad beer) for an upcoming party, and a winter warmer of some sort.

Fermenting: Oud bruin/Vienna Pekko SMaSH
On tap: Nelson dry hopped Berliner/ Scottish Heavy 70-/ NE IPA

Got Whitehouse Honey Ale on the go...started out at S.G. 1080...! Now got a BIPA on the go. Next, Cream Ale, then, when Spruce tips are available...Spruce Beer; Then maybe summer will get here.... :chug:

I'm racking an El Dorado Hefe...was planning on adding 1/2gal of lime-on-aid...or lemonade with mango....in the secondary

any thoughts? this is a summer beer...think hot summer day...tropical island

I'll be brewing an Amber Ale in my second attempt at recipe formulation and AG/BIAB.

Should I worry about water profiles at this stage in the game? I use bottled RO water when brewing.

you may want to add in some calcium chloride to get your calcium up around 100ppm

Oh well so much for new lyrics, but I'm glad to say I will be brewing a nice lager tomorrow morning for a change. Gonna use 12 oz of hops I should have used up long ago, so it should be full of flavour.

Doing a "Wifey's Wheat" that I got from OBK quite a while ago and never got around to making. Hoping the frain is still good after being crushed for all these months, but giving it a go anyway. Next weekend I am looking forward to doing a Caramel Vanilla Cream ale.

Wow I think I may need to stick with Extract only. I'm down to the last 15 minutes of my 2nd batch. About 3.5 hours for 2 full batches :cheers2:
However I'll find out when it's time to drink these.
