Hey LD, curious to see your Beersmith recipe for this as I'd like to do a double batch Kolsch as well. Also, how much 'aging' do you find this Kolsch needs.. I likely won't do it if it needs a long 'grain to glass' period to be tasty.LiverDance wrote:Realized that I can't let this beauty of an evening go to waste so I went home at lunch and mashed in on a Kolsch. Giving the full volume mash in a cooler method a try, aka Jimmy's setupI'm interested in seeing the results

Re: What's everyone making this weekend?
The recipe is the one from BCS, I use US-05 for the yeast so the time frame is short to get it on tap.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Oh cool, figured to get that 'Kolsch' flavour one would need to use actual Kolsch yeast. I remember having yours in the past and liked it, so I'll just straight copy BCS. Thanks!

Made the same BCS Kolsch with US-05 a few weeks back - tasted great when racking to keg.

Re: What's everyone making this weekend?
Just finished up this brew. Started at 6pm and was complete by 8:30 including clean up. Did a 22L batch size but ended up with 23L so I'll have to check my numbers tomorrow when I'm in front of the recipe. I mashed at about 12:45 and the temp dropped from 153 to 145 which is fine by me. Very happy with this method for an after work brew day.

I liked it very much and others who tried it, including the Brewnosers at June's meeting, liked it too. Definitely going to be making more of it. I'll post the recipe in a little bit for you.

Re: What's everyone making this weekend?
Haha, Thanks Peter. I ended up just going with a simple Marris Otter grain bill. Had planned to use Amarillo but then I remembered I didn't love my Amarilo single hop beer that much. So shifted to some old vac packed Cascade I had.
Maybe I'll try the Oatmeal tomorrow.. I was going to use flaked oats (have some, might as well).. should I use steel cut instead?

Re: What's everyone making this weekend?
I don't think steel cut are pre gelatinized, better check on that while planning your day. FWIW, I have the most awful time with flaked oats and wheat. Even the stuff that is supposed to be gelatinized. I generally wind up using AA.

Re: What's everyone making this weekend?
X is right, Steel cut needs a cereal mash before using in the main mash.
I skipped this weekend seeing I started a week holidays, but had time to do another clone of the Smash Bomb Atomic IPA this morning, and if the weather cooperates, will do another this weekend. Gotta love the Citra.

Re: What's everyone making this weekend?
Did a Cherry Wheat beer this past friday. 5 kg fresh tart cherries in primary, and then last night I racked and added a can of cherry puree to the secondary. Guess I'm not into subtle when it comes to fruit flavours.
